Curry Noodles/ Curry Laksa


There are times Diana and I will crave for a bowl of piping hot curry laksa. Making the laksa broth from scratch takes a lot of works so we opted using the ready mix laksa paste. There are so may type of premix paste out there but our favorite is still Tean’s Gourmet brand. We are lucky that we are able to get this laksa paste here so I will always keep a few packets handy my pantry. Preparing this noodles dish is easy and you can have dinner on your table in less than half an hour. All you have to do is add some water, coconut milk and the Laksa broth is done. As for the condiments it is all up to you. You can add noodles, tofu puffs, long beans, eggs, bean sprouts and etc to it. Nothing is more comforting to me than a good bowl of curry noodles.



Ingredients:

1 packet of Curry Laksa Paste
1 can of coconut milk
2 cups of bean sprouts – remove the roots
20 pcs of shrimps – peel and deveined
12 pieces of tofu puffs – wash and squeeze out the oil
Some fish balls/shrimp balls or fish cakes
A small bunch of long beans – cut into 1” length
4 hard boiled eggs
A packet of yellow noodles
Salt and sugar to taste.


1. Boil some water in a medium size saucepan and blanch the bean sprout for 20 seconds. Remove and blanch the noodles for 1 minute. Remove and drain.
2. in a big pot, bring 1000 ml water to boil. Add in the paste, long beans and cook on medium heat for 5 minutes. By this time you can see some oil floating on the top of the broth. Remove some of it.
3 Add in the fish/shrimp balls, prawns, tofu puffs. Let the soup simmer for another 2 minutes until the shrimps is cook and the balls are heated through. Add in the coconut milk. Stir and bring it up to a slow boil and turn off the heat. Check seasoning as you might need to add some salt to it.
4. To serve, put a handful of noodles at the bottom of the bowl, tops it with bean sprouts and eggs. Put in the laksa broth together with shrimps, long beans, fish cakes, fish balls and tofu puffs. Serve warm.

I was thinking of laksa but no laksa paste :( Have to visit the Chinese shop again. Hope it has. It always runs out of stock and takes ages to replenish.....quite annoying. Hope to cook soon . I'm drooling over yours now!

oh thats my favourite. made it several times but I ad to make the broth from scratch. will look for the readymade paste in our market next time. yummy dish indeed.

I also very lazy to cook laksa from scatch, always use the short cuts and your laksa have generous ingredients on top.

You're lucky still be able to get those readymade curry paste over there! Nowadays, we can easily get all kinds of curry paste over here. Prawn mee soup paste, Asam curry paste, Rendang paste etc. You just name it! Hope you're enjoying your day.

I am very stubborn and will always call this Curry Noodles.
Hahaha.
I never changed my north Malaysian Cantonese lingo even when I stayed in KL. Still went with "yat chien", when I say 10 cents. Of which Klites found it funny.

Wendy, I wish I can get fresh 'see ham' here. We do have the frozen one but they are as chewy as rubber. Now hardly people say 10 cents as 'yat chien' :)

waaaaa, curry noddles! my all time fev ;-) dia punyer paste tu made in mana ya? senang juga ada paste2 mcm ni :-) dekat thai byk paste2 laksa ni tp tak pernah cuba nxt time nak try.

I am not sure if we have Tean's Laksa paste here - I will try to look for it. Was it you commented that this tastes better than Prima's?

I must try Tean's. Much as I like Prima for its authentic taste, it is MSG-laden. But I guess if I were living overseas, and I am craving for laksa, I won't care so much lah! :)

oh yes...curry laksa!!love it! you see even hot and humid weather we still eat spicy food,right? Today I just bought an order of Singapore Curry Laksa from Elmhurst..Eliot don't understand why hot and humid weather we still eat spicy food! haha! btw,I don't use per-pack paste anymore..I used my own make sambal belacan paste ...I think the paste in pack smell weird.

Though it's quite easy to get a bowl of curry noodle over here in Penang, but I still prefer to cook it at home. Of course I use the ready made curry paste. :)

i seldom cook curry laksa at home, because there is a stall selling good curry laksa here. A quick way to cook a nice curry laksa using pre-mix paste.

Lesley, did you try out Tean's brand? I never try Singapore Curry Laksa yet. What is the difference? Yea even in this heat I still prefer to eat our spicy food ha ha..

Sometimes my helper does whip up laksa with the paste as well but I think she always overdo it with the water. Yours look so mouthwatering with thick soup. Slurppps!

Oh I don't think I've ever used that brand, must go hunt it down (hope they have it in my local asian supermarket).
