A friend of mine gave me a piece of salted fish and it has been sitting in the freezer since last year. I thought of using it to make Laksa Johor but change my mind and used it for fried rice. It has been the longest time since I have salted fish. I cook this fried rice for lunch on weekdays as I don’t think my husband can stand the stinky smell of the salted fish. I am sure he will ‘pengsan’ (faint) ha ha.. gosh they taste so good in fried rice. I still have half of it and maybe used it for claypot chicken rice.

Salmon Onigiri/Japanese Salmon Rice Balls
Onigiri is Japanese rice balls. In Japan you’ll find onigiri in supermarkets and convenience stores. Usually shape in round or triangle with finely chopped pickles, fish, meat, vegetables in it. Packed into a lunch bag, they are filling, nourishing and easy to eat on the go, whether you're on the road headed out of town or packing for a picnic. I usually make this when I have leftover sushi rice or fish or whatever I have in hand. You can basically put anything in it…. The sky’s the limit.

Hot Cross Buns with Cranberry
Easter is just around the corner and as usual I will bake this traditional bread for the Holy Week. Each year it will be a bit different. I will add a little bit of this and a little bit of that to the recipe. I like adding some dried fruits of any kind to it. I don’t really like spices in my sweet bread so I just added some orange and lemon zest to it.
This year I glaze it with some syrup and pipe the cross on with some sugar icing. I just love these buns; they are soft, sweet and go really well with your morning tea or coffee.

Bloggers Meet Up in Kuala Lumpur and MamaYu Nasi Kukus
I’ve been back for a week and only now I managed to sit down and do something on my laptop. I’ve been very busy running errands, stocking up the fridge etc. Thank God my husband got the house cleaning done and I don’t have to do much. I am also trying to get over the jet lag. Feeling very sleepy around 2 pm everyday and end up taking a couple of hours nap most of the days. Hopefully I am able to get over it soon.
Anyway, while I was in KL I managed to meet up with a few bloggers. The first meeting was at Madam Kwan with Elin , Cheah and Sonia . Thanks you Elin and Cheah for coming all the way from Ipoh to meet me and Sonia all the way from Klang. And thanks for all the lovely gifts. It was great catching up with all of you. Vanilla Cupcakes
I am back from my super long vacations. First I would like to apologize for not replying to all your comments. I will get to it soon. It was great spending time with my family, friends, ex-classmates which I have not met for over 30 years and also some blogging friends. It was nice meeting up with all of you.
I am having so many backlogs in my posting. I baked these cupcakes over in 2012 for Carlos office Halloween party. Thank God I recorded all my recipes so that I don’t forget. His department Halloween theme was Bumble Bee so I decorated cupcakes to fit the theme. The cupcakes were light, fluffy and really moist. Carlos said these cupcakes were gone within minutes. I used my previous recipe but I am posting it here again. As for the frosting you can decorate it with any type of frosting you like.
