Corn Croquettes


This recipe is from Min’s Blog . I bookmarked this recipe some time ago and only get to tried them out recently. I love the rich milky taste of these croquettes. They were crunchy on the outside, creamy on the inside and I think they make a great appetizer for the coming holidays get together. You can make it a day before, put it in the fridge and fried them up just before your family and guest arrives.




Ingredients:

1/2 can sweet corn
2 spring onions – chopped
2 red chilies – cut small
1/2 tsp sugar
3 tbsp flour
1 egg – beaten
1 ¼ cups panko breadcrumbs


For the White Sauce:

50 grams butter
4 tbsp flour
150 ml milk
50 ml whipping cream
½ tsp salt


1. For the white sauce. Melt butter in a pan, add in the flour and continue to stir with low flame until the mixture became smooth. Next, add in the milk and whipping cream in several additions, mix them till well-combined and add in some salt at last. Leave aside to cool down completely
2. Once it is cool mix the corn, green onions, chopped chilies, salt, pepper and sugar until l well-combined.
3. Put the mixture rectangular plate and cover with cling film, store in freezer for at least 2 hours before using. Cut them into equal small pieces (I just freeze them for an hour and shape them with hands)
4. Dust them with some flour; dip them in egg wash and lastly panko bread crumb.
5. Heat up some oil, deep fry the croquette until golden brown. Remove and drain the oil on paper towels. Serve warm.

I have never had corn fritters before. They are lovely and look very tempting! Yum I can just imagine how good.

Gert,
The boys love these type of finger food but I so malas to buat for them.I just hate the oil splatter..more work for me to clean up and secondly, I don't like the oily taste.Do you have any tips to make the croquet or any fried finger food to not be oily?

It's definitely a favorite snack for everyone. Will omit the chilly for kids. Fried would be better than bake.

Lyndsey, this croquette is much softer than the usual corn fritters.

Shereen, I also don't really like to fried because of the oil splatter but this is ok. Not much splattering. You can actually try baking them. I am going to do that the next time I make this.

Linda, anything fried taste much better but baking is much healthier :)

Elin, this croquette is a bit on the soft side. Yea I am looking forward to the move. Can't wait to live there :)
