Red Bean Buns II

I don’t give up easily when come to cooking and baking. If I don’t get it right the first time I will try cooking and baking it again until I am satisfy with the results. I baked these buns not too long ago and many of you mistaken it as some type of pastry and I don’t blame you at all. It does look more like pastry than buns ha ha… anyway, I made this again but this time I change the recipe a little bit and it turn out perfect. What do you think? It looks better than the previous one?



Ingredients:

200 gram bread flour
50 gram flour
30 gram sugar
¼ tsp salt
30 gram milk powder
1 ½ tsp yeast
1 egg
40 gram butter
115-130 ml water (more or less)
A few drop of pandan paste (optional)


Filling:

200g red bean paste (divide into 8 portions)
some cherries or sesame seeds for decoration



1. Mix ingredients for dough except butter in a mixer until smooth. (if you're making pandan flavor you can add in the paste at this stage) Add in the butter and continue to knead until smooth and elastic.
2. Place the dough into a clean bowl and cover with cling wrap to proof for 60 minutes or double in size.
3. Divide the dough into 8 portions and round them into small balls. Then fill the dough with red bean and shape it into smooth balls. Let the dough proof for 15 minutes.
3. Slightly flatten the dough and use a scissor to cut the edges into 8 flower pedals. Cover and proof again for 10 minutes.
4. Eggs wash the bread and garnish the top with cherry. Bake at 350 degree F preheated oven for 20 minutes or until golden brown.

Gert, very cute looking gred bean buns! Yeah, we have to adjust the ingredients most of the time especially yeast. Because different branding gives different result. Glad you did it this round.:o) Have a great day.

Belle, you can knead this dough with hand. Just adjust the liquid accordingly when you knead by hand.
