Blueberry Crumble Slice

Blueberry again? Yeap, I've been loading up my pantry with blueberries since its so cheap now. Carlos never like eating it fresh but prefer it in his dessert so I made this slices with it. This cake is really light and moist.

Ingredient :

6 tbsp of butter
2 eggs
1/2 cup of sugar
2 tbsp of sour cream
1 tsp of vanilla
1 cup of flour
1/4 tsp of salt
1/2 tsp of baking powder
2 cups of fresh blueberries

Crumble topping

3 tbsp of soft butter
1/2 cup of brown sugar
1/2 cup of flour

1) Grease a 8" x 8" square pan and line the bottom with parchment paper leaving an overhang on both side (for easy removing your cake later)
2) Mix all the crumble topping together until it resemble coarse breadcrumbs. In a separate bowl sift flour, baking powder and salt. Set aside.
3) In a mixer cream butter and sugar, sour cream and vanilla until light and fluffy.
4) Add in eggs one at a time, beating well after each edition. Reduce the speed of the mixer and slowly add in the flour until well combined.
5) Spread the batter evenly into the baking pan, cover the top of the batter with blueberries (press berries slightly into the batter) and sprinkle the crumble topping over the blueberries.
6) Bake in a pre-heated 350 degree F over for 35-40 minutes or until golden brown. Cool completely in the pan.
7) To remove from the pan, just lift the cake up from the overhang parchment paper and cut into squares.

It looks yummy!we saw people pick berries along side road near our camp. They are wild red berries though.

Hi this is Joanna from KL. As you know, blueberries are damn expensive here lah. I read that those from the KC forum, they buy frozen berries and keep them frozen till they use it. When the defrost, do they taste like the real ones? If so, I might consider buying frozen ones but you know over here, frozen means not fresh (ha ha ha). Thanks.

Blueberries here in Richmond is not on sale yet.. $3.99 a punnet... So mahal but I love blueberries. I can eat the whole punnet in one sitting.

Gert,Today I bought 2 punnet blueberries for $3.00 only! I never bake crumble so far.Last week I bake blueberries cheese cake still ada half...maybe I will bake cup cake for Elliot!!..what is the different crumble cake and regular cake,just extra crumble on the top?

Joanna, you can always use frozen blueberry and they taste as good as fresh. I used it sometime if its not in season.

Cat, how come its still so expensive at your side. Maybe here is cheap because we have lots of blueberry farm at NJ.

Blueberries in Canberra very mahal at the moment (that's if I can find fresh ones) so have to make do with frozen ones. can't wait for the weather to warm up here to make goodies with blueberries. Your recipe will be one of them.

Cherie, oh yes, it will definitely works with raspberries and yes you can replace the sour cream with yogurt.

Thanks Gert. Just made it and Chris couldn't wait for it to cool so cut some and it was lovely. I put half raspberries and half blueberries as we have them in the garden too. Delightful!
