Chicken Curry

I like using the ready made curry paste from Thailand for some of my curry dishes. The brand the I like to used is Mae-Ploy and they have serveral kind paste like Green Curry, Panang Curry, Yellow Curry, Masman Curry. For this dish I used Masman Curry paste and it has all the ingredient like shallots,garlic, kaffir lime leaves, lemongrass, ginger and other spices in it. So it safe me the hassle of pounding or grinding those ingredients.

Ingredients :

4 pieces of chicken thigh - cut into bite size pieces
2 tbsp of curry paste
2 tbsp of curry powder
1 tsp of chili powder
1 1/2 cup of coconut milk (more or less)
3 potatoes - cut small
a small bunch of Thai basil
1 tsp of sugar
salt and pepper to taste

1) Mix the curry paste, curry powder and chili powder into paste with a little bit of water.
2) Heat up some oil in a pan and stir-fry the paste until fragrant.
3) Add in the chicken and stir fry until the chicken changes color.
4) Add in the coconut milk and bring to boil. Turn down the heat to simmer.
5) Add in potatoes, stir and cover and simmer till the potatoes and chicken are fully cooked.
6) Add in sugar, salt and pepper. Turn off the flame and add in the basil.
7) Serve with warm rice.

Gertrude,I use this brand once,long long time ago when I lived in city,also forget how it taste,then the rest have to throw away when I move to island..hmmmm..i will buy again when i'm going to city again:))..Your curry color look chinese curry style,now you make me remember my mom cooking:))

I saw this curry paste in our local vietnamese store but tak berani cuba lah... Takut the taste tak sama our malaysian style of curry...

Beachlover, I've tried all their paste and they are really good. I like it because is not oily.

Cat, you should try this paste because they are good. Just mix it with some curry powder and you are good to go :) :)

Envy, their curry paste is really good. Have you try all of it yet?

Choy, you can get it at any Asian grocery store in Chinatown. Give it a try. They are really good. I like the red and green curry too :)

babe, love your curry....but what really caught my eyes is your very attractive blue colour ceramic pot. what is that called? did you cook with that ceramic pot? I saw kylie kwong used that and I saw a similar one at the shopping centre.

BBO, thank you. The blue color ceramic pot is called Tagines and the Moroccan used it a lot in their cooking. It can be cook on top of the stove and also the oven. No lah I cook the curry in the wok then display it in the Tagines :) :)
