Cappuccino Cheesecake

Who doesn’t like cheesecake? Cheesecake may just be the perfect food. It is certainly one of the oldest on record. It is believed that cheesecake was served to the Olympic athletes during the first Olympic Games in 776 B.C. Any food with that kind of staying power just has to have something to it, right?

Anyway, since I bought quite a bit of cream cheese when they went on sale not too long ago, I decided to bake something out of it. Chocolate and coffee is such a great combination. It is a marriage made in heaven. If you are a fan of chocolate, cheesecake and coffee, this is for you. The delicate smooth coffee flavor is complemented by the richness of cheese really well.

Ingredients for the Cake Crust

100 gram flour
½ tsp baking powder
70 gram sugar
1 ½ tbsp dark cocoa powder
100 ml milk
85 gram melted butter
1 egg

Ingredients for Cappuccino filling

350 gram cream cheese
150 gram mascarpone cheese
50 gram sour cream
120 gram sugar
1 tbsp cornstarch
3 eggs – lightly beaten
1 ½ tbsp instant coffee powder + 1 tbsp warm water

Garnish:

Some melted chocolate
Chocolate shaving
Some strawberries

1. Pre-heat oven to 350 degree F. Line an 8” x 8” square cake pan with parchment paper overhanging on both side (for easy removing later on) or you can bake this on muffin pan.
2. Sift the flour, baking powder and cocoa powder in a mixing bowl. Add in the sugar and mix well. Combined the milk, egg, melted butter and stir it into the flour mixture. Mix until just combined. Pour into the baking pan or muffin pan and bake for 10-15 minutes until the base is done.
3. Remove from oven and let it cool completely. Reduce the oven to 315 degree F.
4. Prepare the filling. Beat cream cheese, mascarpone cheese and sour cream until smooth. Add in the sugar, corn starch and beat for 2 minutes. Add in eggs one at a time, beat well after each auditions.
5. Dissolve coffee in the warm water, add it into the cheese mixture and mix well. Pour it over the cake base and bake for 30-35 minutes (if you use muffin pan it will take about 20 -22 minutes) or until set.
6. Remove from oven and let it cool completely before cutting into it. Decorate it with chocolate shaving or strawberries before serving.

I am submitting this to Aspiring Bakers #6 : Say Cheese (April 2011) hosted by Jean of Noms I Must.

hi, in item 4, you mentioned add in sugar and corn starch.

i think you left it out at the ingredient column, do you mind telling how much of corn starch to add?

Hi,
Do you bake it as usual or use the bain-marie method?

Gert..I have KIV this...I love cheese in any form :p I know I have to cut down on this but still cheese is one thing I can't abstain from :p I love them in pasta, pizza, salad and cake and biscuits...hahaha and cheese is so expensive over here. When my friend told me that cream cheese is only $1 a piece, I could scream out "why over here it is RM11 a piece of Philidelphia cream cheese ??" :(

Gert, this is definitely something that I couldn't resist! I can finish it in just two bites! haha... Hey, you got lucky! I found the seeds you looking for, yesterday. It's been years since I last saw them on at the counter.
Have a great day.

Jen, I never try baking it without eggs or with egg substitute so I am not sure how it will turn out. Maybe you can try it and let me know the outcome. It will be nice to know :)

Katie, I baked these using the square muffin pan.

Reese, ha ha.. I wish I can share this with you.

Ah Tze, thank you.

Stefania, grazie.

Lena, thank you. At least you eat one or two spoon so it is not so bad.

Farina, long time no see kat sini. You like cheesecake too?

Ann, I don't have coffee often but in cheesecake I don't mind having it :)

Jeannie, if I drink two cups of coffee a day I will be like zombie at night ha ha..I don't think I can sleep :)

Quay Po, me too. I like tea :)

Petite nyonya, how are you doing? I wish I have a big yard or garden in my house to entertain :)

Amy, sorry about that. I already added it into the ingredients.

Chloe, no bain-marie. Just normal bake.

Elin, I am not a big fan of cheese or should I said strong cheese. I don;t mind having the mild ones. Yea cream cheese here is cheap. We paid only $1 for each when it is on sale and I will usually stock it up. Next time when you visit you should buy lots of cheese home :)

Kristy, thank you so much for getting it for me.
