Mee Rebus/Noodles in Sweet Potato Gravy

This mouth –watering mee rebus (in English, Mee rebus is literally translated as boiled noodles) is a popular dish among Malaysian and Singaporeans. It is a noodles dish served with thick sweet potato gravy and garnish with prawn fritters, fried tofu, hard-boiled egg, bean sprout, julienned cucumber etc. I made this some time ago with the leftover prawn fritters that I made perviously and decided to use it up for this dish but if you don’t want to make any fritters you can always replace it with blanched shrimps or cooked chicken.

Ingredients for the gravy:

4 shallots
3 cloves garlic
1” ginger
4 tbsp dried shrimps – soak in water for 15 minutes
6 red chilies – remove seeds
2 stalk lemon grass – remove the outer layers and cut small

Blend all the above into a smooth paste.

2 medium size sweet potatoes – steamed and mashed
2 tbsp curry powder
1 tbsp fermented soy bean paste (tau cheong)
1 tsp sugar
Salt to taste
5-6 cups chicken or beef stock

1. Combined the curry powder, bean paste into the blended ingredients. Mix well. Heat up a stock-pot, put about 3 tbsp of oil and add in the blended spices. Sauté the spices for 5 minutes or until dry and fragrant.
2. Add in stock and mashed sweet potatoes. Stir well and bring it up to a boil. Turn down the heat and let it simmer for 10 minutes. Add in sugar and salt. The thickness of the gravy is depending on individual preference. You can add some water to make it lighter.

Ingredients for garnishing:

500 gram yellow noodles – blanched in hot water for a few minutes
A handful of bean sprouts – blanched in boiling water for a few seconds
5-6 pieces prawn fritters – cut into cubes
2 pieces fried tofu – cut into cubes
3 hard boiled eggs
1 cucumber – julienned
2 red chilies – sliced
Some fried shallots

To serve:

Put the some noodles and bean sprouts in the serving plate or bowl. Pour enough gravy over it and top it with the garnishes.

Gert,
I seriously love mee rebus...but I am too lazy to make from scratch..hehehe.I buy the packet ready made ones(can't remember the brand and too lazy to go and check in my pantry)and it is as good as we can get in Malaysia but of course without the kuih la.The best mee rebus I ever had was in Pulau Sebang/Tampin..but hor,the last trip home when I went all the way there and makan, dah tak sedap.I think I am so used to the ready made packet ones that real fresh one I dah cannot appreciate...hahahaha.Cia-lat + dahsyat!!

you really have to praise and give yourself a big pat that you are able to put up all the wonderful malaysian dishes and kuih on your dining table. I understand that it's not quite possible to have this out on the streets and the only way to enjoy this to cook them yourself! You know, after your 'sang har meen" post, i was so tempted and i have that several times within that few weeks!

I wonder if mee rojak and mee rebus is the same. Somehow I prefer mee rojak but then I wonder if it's just due to different stalls. This mee rebus is one of my FIL's favs :)

Oh I love mee rebus! But I doubt I have the patience to cook it from scratch...think I'll just go kopitiam and eat a plate, heehee! But just in case I move back to CA, I know your blog has this recipe, heehee. Thanks!

Shereen, you have to show me how the ready made packet look like as I wanted to look for it when I go home. Yea I think our taste bud changes when we are away from home for too long. Now I can't take anything too pungent ha ha..

Kristy, lucky you. Can just go out and get some. Here we have to cook it ourselves. You too have a great weekend :)

Lena, we can't get this type of dishes here except from the Malaysian restaurant which is too far from my home. So have to cook it myself :)

Ann, I didn't know they have ready made paste for mee rebus. I have to look for it the next time I go back to Malaysia.

Wendy, to mee they are similar except the rojak man one are sweeter.

Jennifurla, thanks.

Anh, you are welcome.

Sonia, looking foward to your posting.

Yati, it is not as cold now. I am so looking foward to spring :)

Elin, I hardly post western dishes because I cook mostly the same dishes that is why you see more of our Asian food here :)

Bee Bee, easy for you to just go and buy some from the kopitiam. Cooking noodles like this is too much work :)

LCOM, try it out someday :)

Jeannie, thank you.

I love your blog. Very interesting and delicious food. Can you tell me why is my gravy a little bitter? I realize it is always bitter whenever I grind lemon grass into a paste. A good example is sambal ikan bilis. The only time it is not bitter is when I use it to cook rendang. I made this mee rebus gravy but it has a bitter taste. Please advise.
Thanks!

I made this once a long, long time ago before blog. So long ago I can't even remember what it tasted like, lol! Must try again with your recipe, thank you :)

With sweet potato gravy? We call that mee jawa here...nicer than mee rebus or mee bandong or mee Hongkong (with tomato sauce gravy).
