Milk Pudding
We are experiencing some severe heat wave here on the East Coast and the temperature sore up to upper 90’s and someday over 100 degree for the past few weeks. In the weather like this I tried to lay off cooking and baking as much as possible and all I want is to drink and eat something cooling and sweet. This milk pudding is such a nice treat for all of us in this scorching heat . No relief in sight yet. Crazy it may sound but I wish it is winter now :)
Ingredients:
600 ml water
120 gram sugar
8 gram agar agar powder
3 pandan leaves
300 ml milk
200 ml coconut milk
A few drop of pandan paste
1. In a medium size saucepan bring the water, agar agar power and pandan leaves to boil. Let it boil for 3 minute until agar agar power.
2. Add in sugar; continue to stir until sugar dissolved. Lastly pour in the milk and coconut milk. Turn down the heat and bring the mixture to a slow simmer. Turn off the heat and remove the pandan leaves.
3. Remove ¾ of the mixture and add in a small drop of pandan paste. Pour into prepared pan or mould. Let it set before pouring the balance of the agar agar (white portion) mixture on top. Let it set and serve cold.

Hey about your pictures (photos) were out of the box and also the bottom (post a comment) was overlapping with the pictures (linkWithin). Its it something wrong with your page? It was like that since you changed your page design.

i wish it was fall. this humidity is just draining. i can't remember the last time i cooked or baked. i do miss it. never made milk pudding this way, but i wish i had.

It's so funny hearing everyone complaining about the heat! It's just a normal summer here in Florida. On the coast here we are just in the low 90s pretty average for us. We never reach 100. Everyone seems hotter than us!

It's a wonderful feeling to eat this chilled pudding on a hot day. It's a favourite of mine. Yum!

Lovely green coconut milk pudding! Should be refreshing. ;) Btw, it has been raining cats and dogs over here in Singapore and been like that for so many days! It's been flooding in several areas here, such crazy weathers , so unlike the weather I grew up in. *sigh*
This is so refreshing and I love the green color, so sweet.
Well here in San Francisco it just 57 degree now so no heat wave. I still will make this pudding since it look so good.

It so inviting! Do you buy the pandan paste or am I misunderstanding the recipe? I went to a vietnamese market and they don't know what I am talking about. Would you mind posting a picture of the product?

There hot but here very cold..until my bones all aching and my nose falling off..lol!..but I am going to make this puding tomorrow.Winter makes me hungry and just feels like want to eat and hibernate!

Wendy, thank you. Yes you do need a few drop of pandan paste for the green color. You should be able to get pandan paste at the Vietnamese store. By the way, where are you located? If you are in the US I might be able to send you a bottle.
