Tuna Stuffed Tomatoes

My tomato plants still giving me lots of tomatoes and normally we will just eat them fresh. But this evening I decided to bake with it. Here is a very simple recipe.

Ingredients :

4 tomatoes
40z/115g of canned tuna - drain
10 green olives - chopped
2 shallots - chopped
1 tbsp of lemon juice
1/4 cup of low fat mayonnaise
1 tbsp of mustard
1 tbsp of tomato sauce
Salt and pepper to taste

1) Cut the top of the tomatoes and scoop out the seeds
2) Place it on a baking dish.
3) Mix all the rest of the ingredient well and spoon the tuna into the tomato shells.
4) Bake in a pre-heated 350 degree F oven for 20 min.
5) Serve warm or chilled.

Note : I didn't add any salt to it because the tuna is salty.

Gert ... you are SO creative! This is a great appertizer for cocktail parties. I should make it for our pigroast next year. Yummy!

Rita, I am not sure it this is a good idea for a cocktail party because after baking the tomatoes gets really soft. Maybe is more for a sit down dinner where you can use fork and knife :)

Ok, Gert. Thanks for the heads-up. Pigroast is doable I think as we do provide cutlery and guests do get to sit down. I will try some for personal consumption first. :)

Yumyum! Those tomatoes look wonderful I love stuffed veggies and the likes. Tuna and tomatoes are just perfect. Lovely recipe. :)
