Roast Chicken with Vegetables

On the days when I am just too lazy to cook anything fancy I will just make a roast chicken. To me is comfort food and really simple to make and with the leftovers I can make chicken sandwich or chicken salad the next day. I like adding some vegetables like carrots, peppers, pumpkins, onions and potatoes to the roasting pans.

Get a chicken between 3-4 pound and clean and trim off the fats. Dry the chicken and generously rub it all over with balsamic vinegar, salt & pepper, onion powder, garlic powder, paprika and stuff the cavity with cut onions, orange and thyme and secured the legs with bamboo skewer. Let it marinate a few hours in the fridge.

Cut some carrots, red peppers, pumpkins, onions and potatoes in chunks. Place them in a big baking dish and drizzle with some olive oil, salt and pepper. Toss it well. Place the marinated chicken on top of the vegetables and drizzle and rub some olive oil on the chicken. Bake in 400 degree F oven for 1 hour 15 minutes or until the thermometer in the thigh reads 170 degree. Remove and let it rest for 15 min before carving it. Enjoy!!!

Gert, Your roasted chicken looks so delicious! I never roast whole chicken before afraid that it will not cook thoroughly. Thanks for the recipe. It looks easy to make.

Gert,
My hubby does not like bones in the chicken. Can we substitute with chiken breast? Yeah, I know it would taste as good but apa nak buat, hubby just doesn't like to eat chicken with bones. Always boneless breast. Susah punya orang!

Gert it looks really easy to make .. so thanks for the recipe .. my kids love roast chicken .. well not all of my kids ... my eldest is a vegetarian .. so guess she can makan the veggies easy for me to make all in one .. satisfy everyone in my family ;)

looks great, i love grilled chicken. i have similiar recipe with urs, just adding lemon juice to make it chicken more tender ;)

Cat, you can roast a whole chicken and hubby will eat the breast and the kids and you can eat the thigh, legs and wings. Boneless breast meat is really dry.

Beachlover, hot also must cook dinner. I crank up the A/C lor.

Envy, the vegetables get really sweet by roasting especially peppers and pumpkins

Lia, I too like grilling but is too hot to be standing outside the deck grilling the meat.

Pinky, I have Zanussi oven back home since 1986 and my mom is still using it. Now I am using GE and is pretty good. Not sure what brand is good back home.

iv yet to roast a whole chicken. usually only parts but somehow mine after 1 day, mesti dry and hard. tenson betul. eh u didn rub honey to the chicken at all? did u cover it w aluminium foil or just let it bake like tht?

PJ, I didn't rub any honey on it at all. It might burn while roasting. This bird is small so tak payah cover with alum. foil.
