Lemon Bars

Carlos loves tangy dessert especially lemon cake and lemon bars. These luscious bars are easy to make. The crust is like a shortbread with tangy lemony custard and with a bit of powder sugar dusting. These bars are just delicious with a perfect balance of sweetness and tartness.

Crust :

1 cup of flour
2 tbsp of powder sugar
1/2 tsp of salt
1 stick (8 tbsp) of butter - cold and cut into pieces

Filling :

2 large eggs
3/4 cup of sugar
2 tbsp of flour
1/4 tsp of salt
2 tsp of lemon zest
1/4 cup for freshly squeezed lemon juice

1) Pre-heat over to 350F. Butter and line a 8" x 8" square pan
2) For the crust combined flour, sugar, salt and butter in a food processor
3) Pulse a few time until mixture is crumbly
4) Press evenly into the bottom of the baking pan and bake for 18-20min. Set aside
5) For the filling combined all the ingredient and mix well
6) Pour over crust (is ok if crust is still hot) and bake until filling is just set or until lightly brown. It might take 20 min
7) Cool completely before serving. You may dust with powder sugar if desired

Wah Gert, your lemon bars looks really good. I also like tangy desserts instead of the tradiotional sweet type of desserts. One of my favourite is Key Lime Pie. Have you made key lime pie before?

Hi Gert,

I just want to thank you for sharing all these lovely recipes. I have tried out quite some of them and they all turned out good! Hubby gets hungry every times he looks at your blog. He especially like the Ayam Rempah Pedas, he can eat spicier than me. I browsed through your entire blog but I couldn't find any curry chicken recipe. If one of these days you cook curry chicken, can you please share here? Thanks
