Banana Bread

What do you do when you have some over-ripe bananas on your kitchen counter. For me I will make banana bread. I've been making this bread for so many years and I can't even remember where I got this recipe from. I made this bread a while ago and forgot to post it. This is a no frills banana bread and is very moist and tasty.

Ingredients :

1 1/2 cup of flour
1 tsp of baking soda
1/2 tsp of baking powder
1/4 tsp of salt
1 cup of brown sugar
1/2 cup of melted butter (1 stick)
2 large eggs
3 ripe bananas - mashed
1 tsp of vanilla
zest of 1 lemon
2 tbsp of milk
A handful of chopped walnuts


1) Pre-heat oven to 325 degree F and lightly oil a loaf pan.
2) In a mixing bowl sieve flour, salt, baking powder and baking soda.
3) In another bowl, mix melted butter, sugar, bananas, eggs, milk, vanilla and lemon zest
4) Fold the flour into the banana mixture and mix well. Add in the walnuts.
5) Pour into the loaf pan and bake for 45-50 min until the bread is done.
6) Allow to cool for at least 30 min before removing from pan.

Note : You can also add in raisins or choc. chips to this bread.

Pinky, I am no where near LA lah. I moved from California 2 years ago. I am nearer to New York. Any chance of flying to EWR? Then can come to my house :)

I also have alot of over-riped bananas sometime. Biasanya I buat cenkodok pisang but got to try your banana bread lah.

I love banana cakes too. With nuts or raisins. But the guys in the house prefer them plain. So I usuallly make them with plain.

I love banana bread .. simple to make and quick to eat hehehe .. sometimes i put dried blue berries in my banana cake .. btw .. must try putting lemon zest .. will try out your recipe soon ..

OK...I want to attempt to make banana cakes (I LOVE THEM TO DEATH)...but looking at the list of ingredients..i have questions lah:

1) When u said 1 cup ...how big is ur cup ah?

2) Must use lemon? but banana cake wor? apa guna lemon itu? hehe..

3) When u mix the ingredients, do u use a mixing machine? or?

4) We have to use over-ripe banana?

Sorry for all these beginner' questions...

But i want to make banana cakes lah!

Envy, I pun suka buat banana bread. Campur ingrdients and kacau kacau and bake. Is good for breakfast :)

Fan-C, here is the answer to all your questions.
1) You need a proper measuring cups for baking. Go and get a set. It come in 1 cups, 1/2 cup, 1/4 cup and 1/3 cup.
2) I put lemon zest for extra flavour. You don't have to put it.
3) I don't use mixer for this bread. Just mix everything with hand.
4) Over-ripe bananas give a sweeter and extra fragrant to the banana bread.

Zue, to make the banana bread moist you really need over-ripe bananas or add a couple more bananas.
