Peanut Butter Banana Cake


My husband love peanut butter and he can just eat it straight out of the jar. I called him peanut butter monster. Since he like it so much I thought I should make him a cake using peanut butter. There are so many recipes for peanut butter cake out there but I end up using the recipe of Amie’s Little Kitchen . For me the cake tasted alright but my husband complaints that it is not sweet enough and need more peanut butter. I will keep that in mind if I bake this cake again.

 

Ingredients:

2 ½ cups flour
½ tsp baking powder
1 tsp baking soda
¼ tsp salt
1 cup vegetable or canola oil
¾ cup light brown sugar
4 eggs
4 tbsp creamy peanut butter
1 ½ cups mashed bananas
1 tsp vanilla


1. Prepare, grease and line an 8” round or square baking pan. Pre-heat the oven to 350 degree F.
2. Sieve together flour, baking powder, baking soda and salt. Set it aside.
3. With a stand mixer whisk eggs and sugar until thick, fluffy and double in volume. Add in the peanut butter, vanilla and mashed bananas. Mix well.
4. Turn down the speed of the stand mixer, and slowly add in the flour mixture. Mix well. Using the spatula slowly fold in the oil. Mix until combined.
5. Pour into the baking pan and bake for 50-55 minutes or until when tester inserted at the center comes out clean.
 6. Let the cake cool down in baking pan for 10 minutes before removing it from the pan. Cool completely before cutting into it.

May I know I cup = ? g/ ? ml cos I don't have cup and always use g or ml for baking. I am new to baking. Thank You.

Yes, Carlos is right. 4 tbsp of peanut butter is too little for the amount of batter. You must try baking this cake again and let me know... Hehehehe.

Gertrude, his is sure a yummy cake! I tried eating peanut butter out of the bottle and unfortunately I like it hah..hah...

Anon, if you want to learn to bake it will be a good idea to invest in a set of measuring cups as most of the recipes from the USA are in cups.
