Mixed Fruits in Honey Ginger Dressing

We are at the peak of our moves and I am just too tired to prepare anything elaborate. So it will be very simple meal like sandwiches or take out meal for us this week as all the pots, pans and kitchen utensils are all packed away in boxes. It finally sinks in when I see all the boxes everywhere that we are leaving this place we called home for 6 years. It is sad to leave our very dear niece Diana and friends. All our dear friends who had become our family over here, the stories that we share, and the good times that we have together will be forever in our heart. I hope all of you will come and visit us soon

Enough of my rambling and now back to this mixed fruit salad. I prepared this mixed fruits salad for our lunch over the weekend using whatever fruits that is left in the fridge. You can use any fresh fruits you have in hand.




Ingredients:

3 cups of fresh mixed fruits

Dressing:

2 tbsp honey
2 tbsp lemon juice
2 tsp ginger juice
1 tbsp chopped mint leaves

Combined the dressing and pour it over the fruits. Toss it well and set the fruits marinate in fridge for at least half an hour before serving it cold.

I hear you. I went through that same sentiments six years ago when my husband too had a corporate move to the Bay area. the Bay Area welcomes you. Hey at least know that you have one blogger fan looking forward to meet you!!! And if this is any consolation, we have been having spring weather in the middle of winter!!!

Gert, I understand how you feel, especially when you don't get to see Diana as often as you want but I am sure she fly over to see you as often as she can :) You can chat on skype with her everyday. I am sure your friends will do the same with you on skype :)
