Crispy Fried Chicken Wings

My mom used to make chicken wings like this once a while for us. She never cooks her wings any other way except frying them. I had features a few other wing recipes here like Crispy, Sweet and Sticky Chicken Wings, Grilled Mayonnaise Chicken Wings, Honey BBQ Wings, Oven Baked Chicken Wings, etc but this is just a plain and simple fried one. I just marinate it with a few ingredients and coated it with some flour and fried it. Delicious!

Ingredients:

10-12 chicken wings – clean, cut and tips removed

Seasonings:

2 tbsp soy sauce
1 tbsp ginger juice
1 tsp pepper
1 tsp chili powder
½ tsp garlic powder
½ tsp salt

Orange Almond Sweet Rolls

The weather is getting a bit warmer so it is time to make some bread for our breakfast. Instead of the regular cinnamon filling I change it to citrus infused almond filling. The rolls are soft and fluffy and the almond filling is not overly sweet. They are the perfect rolls to have along with a cup of coffee or tea. We just adored these rolls and we take one of this any times over the traditional cinnamon roll.

Dough:

¾ cup milk warm
6 tablespoons butter, melted and cooled
2 large eggs
4 cups flour
¼ cup sugar
2 ¼ tsp instant yeast
1 tsp salt

Raspberry Almond Cake

It is not a very good idea to bake cake when you can’t smell anything. As you can see this cake was over baked and turn out pretty dark. When I do baking I normally don’t use a timer as I rely on my sense of smell. Once I can smell my bakes that mean it is time to check on it. I baked this when I was sick over a month ago and once I put the cake in the oven I totally forgotten about it until it was too late. Oh well, nevertheless it still tasted great.

Ingredients:

226 gram/2 sticks/1 cup butter
180 gram sugar
5 eggs
170 gram ground almond
150 gram flour
¼ tsp salt
1 tsp baking powder
1 tsp vanilla
50 ml milk
1 cup Red Raspberries

Asian Style Butterflied Roast Chicken - S$20 Budget Meal (Blog Event)

I will prepare at least 3-4 elaborate dinners each week and the rest of the week will be something simple like sandwiches, salad or leftovers. I don’t normally have a menu plan out for the week. During groceries shopping I will buy what is in season or what items are on sale. I will cook the weekly meal based on what I bought or what I still have in the fridge.

Here is one of the many meals I prepared for our dinner and sharing this with S$20 Budget Meal Blog Event hosted by Elena of Cuisine Paradise. The theme of this event is to prepare any "2 Dishes plus 1 Soup" or "1 Pot Dish" using a Maximum budget of S$20.00 or in my case US$15.00. I spent a total of $ 12.21 for this meal that will serve 4 people.


We will have roast chicken once every two weeks. I will usually marinate it with lots of fresh herbs and seasonings but for this chicken I marinate it with some Asian ingredients. We will usually eat this with roasted vegetables accompanied with some bread or rice.

Green Tea Loaf

My sister Angela bought me some green tea powder two years ago and I still have it in my fridge. I hardly bake anything with it as my other half is not a fan of its flavor. When I saw the green tea loaf at Frozen Wing’s blog I knew I have to try it out. The swirl of the bread she baked was so pretty. Guess what, mine turn out looking totally different. Serve me right for not reading the instruction properly. I have to divide the dough again into two after proofing and I didn’t do that. Oh well, I will do a better job the next time. Lesson learned, no more glancing through the instruction again.

Viennese Plum Cake

A friend of mine gave me this recipe last year and I only baked recently since I had some plum sitting on the kitchen counter. The cake is moist and tender and I just love the crunchy streusel topping. I think it will taste just as good if you want to make it with fruits blueberries, raspberries, peaches etc...

Ingredients:

1/2 cup/113 gram soft butter
1/2 cup sugar
2 eggs
1 tsp essence vanilla
2 tbsp sour cream
1 1/4 cups flour
1 tsp baking powder
1/4 tsp salt
5 plums – cut into small chunks
1 tbsp sugar + 1/4 tsp cinnamon powder

Butter Chicken


Butter Chicken Recipe (Murg Makhani) the best known Indian foods all over the world. Butter chicken is usually served with naan, roti, parathas, ghee rice, or steamed rice and its gravy can be made as mild or spicy as you like. Butter Chicken comes in many variations; some contain cashews while others contain many different spices such as turmeric and cumin. For this dish all the ingredients should be easy to find; most spices are readily available in major supermarkets. Ghee is a common ingredient in Indian cooking. If you can find it you can always replace it with butter or olive oil. This dish is great to eat it with rice, roti canai or spring onion paratha.

Marinate:

1 ½ pound of diced chicken (thigh or breast)
1 clove garlic – finely chopped
1 tsp grated ginger
1tbsp lemon juice
1 tsp chili powder (or to taste)
2 tsp paprika
1 tsp garam masala

Thai Coconut Sticky Rice with Mango (Khao Neaw Ma Muang)

Most of the Thai restaurants have this dessert dish on their menu. Not only because it’s traditional but they are pretty simple to make. With just a few ingredients you can creates a beautiful dessert that tasted great and appeals to the eyes too. Your guest will be impressed when you serve this to them. If you haven’t tried it, give this dessert a go. I am sure you will not be disappointed.

Red Bean Buns

This recipe has been in my files for a long time. I bookmarked it since 2009 and only now I am making it. I am not sure what happen but the dough didn’t rise as much as I wanted it to. I blame it on the cold weather ha ha.. This recipe is adapted from Kitchen Corner.

Ingredients for dough:

200 gram bread flour
20 gram flour
25 gram sugar
1/4 tsp salt
1/4 tsp yeast (I used 1/2 tsp)
15 gram milk powder
25 gram egg
115 ml water
15 gram butter

Fried Udon Noodles

I love udon noodles. It can be in soup or quick stir-fry. I will always have a few packets of it in my fridge so I can have it anytime I want. Making this noodles dish is easy. You can pretty much use any type of proteins or vegetables you have in your fridge.

Ingredients:

1 packet fresh Udon noodles (400 gram)
1 piece chicken breast – removes skin and sliced thinly
10 shrimps – peel and deveined
3 cloves garlic – chopped
2 shallots – sliced
1 carrot – peels and sliced thinly
5 button mushrooms – sliced
1 yellow pepper – sliced thinly
A handful of sugar snap pea – cut small
1 green chili – sliced thinly

Steamed Salted Chicken with Chinese Wine

When the organic free range chicken goes on sale I will usually buy a few of it and freeze it up. Normally a 2.5 pound chicken will cost around $14.00 each but that day it went for $8.00 each. The best way to prepare this type of chicken is steam it. It retains its flavor and sweetness. The chicken came out tender and juice, definitely a great dish to serve for dinner with some Ginger Scallion dipping sauce.

Ingredients:

Half chicken – preferable free range chicken
1 tsp salt
3 tbsp of Chinese cooking wine
5 slices ginger
3 stalks spring onions/scallion

Chocolate Chip and Pecan Cookies

After being sick for some time I am finally back to my old self again. I need some comfort food. What could I whip up to make this day even better? Something like cookies? My favorite, or everyone’s favorite is chocolate chip cookies. These are the perfect chocolate chip cookies for me. Crispy edges with slightly chewy center and an exploding rich chocolate chips and a hint of coffee flavor. Yummy!!

Mee Rebus/Noodles in Sweet Potato Gravy

This mouth –watering mee rebus (in English, Mee rebus is literally translated as boiled noodles) is a popular dish among Malaysian and Singaporeans. It is a noodles dish served with thick sweet potato gravy and garnish with prawn fritters, fried tofu, hard-boiled egg, bean sprout, julienned cucumber etc. I made this some time ago with the leftover prawn fritters that I made perviously and decided to use it up for this dish but if you don’t want to make any fritters you can always replace it with blanched shrimps or cooked chicken.

Ingredients for the gravy:

4 shallots
3 cloves garlic
1” ginger
4 tbsp dried shrimps – soak in water for 15 minutes
6 red chilies – remove seeds
2 stalk lemon grass – remove the outer layers and cut small

Blend all the above into a smooth paste.

Rainbow Pudding

I’ve been under the weather for the past one week. With all the medicines and nasal spray my taste bud and sense of smell went haywire. I can’t taste or smell anything at all. I have no appetite and all I want is something cold and sweet. I decided to make this pudding. I love the vibrant marbling effect of this pudding. Aren’t they beautiful?
