Mango Jelly/Mango Agar-Agar

We are having some crazy heat waves for the past two weeks. So I am not doing much cooking or baking for the time being. We just have salads or sandwiches for our meals. I am craving for something cold and refreshing to ease the heat. Since mangoes are in season and I always have a few in my fridge, I decided to make some agar agar with it.

Ingredients:
From My Kitchen Snippets

5 gram agar agar powder
2 cups water
1 cup milk
2 mangoes – cut into chunks
4 - 5 tbsp sugar (depend on how sweet you like it)

1. Puree the mangoes with milk until smooth. Set it aside.
2. In a saucepan, bring the water and agar agar to boil. Lower down the heat and let it simmer of 3 minutes or until agar agar powder dissolve.
3. Add in the mango puree and sugar. Once it comes up to a boils, turn off the heat immediately or else the milk will curdle. Check if the sweetness is to your likings.
4. Pour it into the mould and let it set in the fridge before serving.

Approximately how many cups of puree does two mangoes make? Good fresh mangoes are hard to come by in Canada, so I usually end up having to use canned puree! My usual recipe uses gelatin, but I'm interested in trying it with agar agar!

The mango available here on the west coast is usually green and then turns red. Do I wait until it is soft before I use it? The yellow ones are also available but they are much smaller and more expensive.

Very pretty and yummy mango jellies. We are experiencing hot weather these few days too in Singapore. I certainly would love to have one of your jellies.

Gert, I love how you present them. Really pretty. I should say no one could ever resist agar2 here especially on this crazy weather.
Enjoy your week!

Rona, is about 1 1/4 cup of puree.

Lena, at least you get some rain. Here no rain at all and the poor grass are all dry and death :(

Jeannie, thank you.

Ann, the weather here is crazy. It broke the all time high record!

Wendy, you have to use soft ripe mango. I think the small yellow ones taste so much better. That was the one I used.

Yummy Bakes, yes this is great for super hot weather.

Rabiantun, thanks.

Sonia, yea the weather here is crazy.

Shereen, too bad pantry I ran out of evaporated milk. We need to switch place. I prefer cooler weather than this super duper hot one here.

Mary, you are most welcome.

Kristy, agar agar is always good for me anytime :)
