Grilled Pork Tenderloin with Pomegranate Glaze

Pork tenderloin is one of my favorite cuts of meat. I love how tender the meat is and I can marinate and glaze it with anything and it will cook in no time. I will usually throw it onto the grill and let it grill on all sides. As for the marinate it can be anything seasonings of your choice and for the glaze I used pomegranate juice with a few other ingredients. It turns out really good and flavorful. It is super easy to prepare and quick cooking…I mean grilling! And the best part…no pots and pans to wash!
 
 

Ingredients:

2 pounds pork tenderloin
1 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1 tsp paprika


Glaze:

1 bottle 8-ounce bottle 100% pomegranate juice
2 tbsp orange marmalade
1 tbsp sriracha chili sauce
1 clove of garlic, finely chopped


1. Marinate the meat and it aside for at least an hour.
2. Place all the glaze ingredients in a small saucepan and cook over moderate heat to reduce by half. Allow to cool. Reserve half for serving with the pork and use the remainder for basting the pork.
3. Grill meat over hot grill until brown on all sides and internal temperature reaches 145 - 150 degree F. This will take about 15-17 minutes (depend on the size of the pork loin)
4. Brush the meat with glaze, cooks it for another minute or two. Transfer the meat to platter, cover it with foil and let it rest for 5 minutes before slicing into it. Serve meat with the remaining glaze.

I have 2 bottles of pomegranate juice concentrate and always forget to use them. Shall not waste them as I have a good recipe to use them up:))
