Pomelo and Mango Salad

Pomelo is one of my favorite citrus fruits. Winter is pomelo season and you can see them everywhere. The pomelo here is not as big as the one back in Malaysia. It is a little bit larger than the size of a grapefruits. I will normally buy 3-4 fruits at one go, peel it and keep it in a container and snack on it. There are days I like to add it to my salad. Since mango is also in season I added some of it to the salad. This salad is so refreshing and it will be great to serve it during summer or on hot weather.

Ingredients:

1 pomela – peel, skinned and pulp removed
1 unripe mango – peel and julienned
1/2 cup cilantro
1/3 cup roasted peanuts – roughly chopped
2 bird eye chilies – cut small (optional)
1 cup crispy fish rolls

Dressing:

2 tbsp plump sauce
1 tbsp fish sauce
3 tbsp lime juice
1 tbsp soy sauce
2 tbsp honey
1 tsp sesame oil
1 tsp roasted sesame seeds

1. In a bowl, whisk together the dressing ingredients until well combined.
2. Drizzle the dressing over the rest of the ingredients and give it a few toss. Serve immediately.

Note: You can replace the crispy fish rolls with grilled shrimps, grilled beef or any type of crispy snacks of your choice.

I like to peel pomeloes, with only the flesh left, break them apart to look like rice granules and eat with a spoon.
I can eat one whole pomelo at one go and suffer later. Mom warns me all the time "Sup yeet ah!!"
and it's true, painful leh, LOL!
