Ginger Miso Glazed Salmon with Mango Salsa


I am able to get very fresh salmon from Ranch 99 here in CA and I will serve it for dinner at least once a week. Carlos loves this fish and I usually serve it with some light salad and savory rice. With a few minutes under the broiler the miso gives the salmon a nice browning but remains juicy and succulent beneath. Miso is a fermented soybean product and you can read more about it here .

Ingredients:

2 pieces of salmon fillet – about 6 ounces each

Marinate:

2 tbsp light miso
1 tsp grated ginger
1 1/2 tbsp mirin
1 tbsp brown sugar
2 tbsp rice vinegar




1. Pre-heat the oven to 400 degree F. Line a baking pan with aluminum foil.
2. In a bowl, mix all the marinate ingredients until well combined. Arrange the fish in the baking pan. Lightly sprinkle it with salt and pepper. Spoon the marinate mixture evenly over the fish. Reserve some for basting.
3. Bake the salmon for 10 minutes, turn the oven broil function and broil the fish until golden brown basting it once or twice with the miso mixture.
4. Serve immediately.



Mango Salsa

2 ripe mangos – peel and cut into cubes
Half red pepper – cut into cubes
2 spring onions – cut small
2 tbsp lemon juice
1 tbsp sugar


Mix everything together and set it to marinate in the fridge for half an hour before serving.

This is the kind of meal I would love to have everyday if not for the expensive price of the salmon :) Mango salsa and salmon goes well...yummy. I must try it with miso, thanks for sharing the recipe and your photo makes me drool.

A new recipe for me as I never try miso with salmon, only know use it in jap food! Your mango salsa looks so delicious! I can try out for my family, I usually just mix with Teriyaki sauce. Thanks!

Elin, yea the salmon here is not cheap either. Is $7.99 a pound but it is still cheaper eating it in restaurant so I don't mind pay for it :)

Sometimes it turned out to be so frustrating when you can't get the fresh & nicest seafood in town. According to the fishmen, they'll have to spend at least a week at the sea for one fishing trip (over here). So just imagine that!
