Vietnamese Caramelized Chicken Wings

I still have plenty of chicken wings left in my freezer. Weather is too hot to grill them outside so I just cooked these wings on the stove. These wings are tender and succulent and it is great to serve it with rice and some pickle vegetables.

Ingredients:

12 chicken wings – clean and cut
4 kaffir lime leaves
3 stalks lemongrass – finely chopped
2 tbsp grated ginger
2 shallots – sliced thinly
3 bird eyes chilies – finely sliced




Seasonings

3 tbsp fish sauce
2 tbsp soy sauce

Caramel:

4 tbsp sugar
4 tbsp water

1. To make the caramel, gently heat up the sugar and water in a small heavy saucepan until it turns golden. Set it aside.
2. Heat up the wok with 2 tbsp of oil. Stir fry the lemon grass, grated ginger and shallots until fragrant and lightly brown.
3. Add in the wings; toss them around the wok to brown. Pour in the caramel sauce, seasonings, kaffir lime leaves and bird eyes chilies. Give it a few stir and turn down the heat.
4. Cover and let it simmer 20 – 25 minutes or until tender and sauce caramelized.
5. Remove and serve warm or at room temperature.

Note: You can always add a bit of water if the wings get too dry before it is cook.

Good morning. What is the time in Pennsylvania now? Chicken Wings, yum..yum.. Those chicken wings looks so delish especially eat with the daikon/carrot pickles. Did you fried them? Well about the house will KIV hahaha.

I love this dish. Looks so yummy. Do you have any tips on buying lemongrass? They look so dry and old in the market. Also how do you make pickle vegetables? It is such a complement to the wings. Thanks.

Wendy, not sure where you are but over here we can get the already chopped frozen lemongrass. So I hardly buy the fresh ones. As for the pickle vegetable, just cut up the cucumber, carrots and chili and pickle it with 1/2 cup vinegar, 3 tbsp sugar and 1/2 tsp salt.

Thank God I had printed out the recipe, as my hard drive crashed and I lost my links. But now that I've found it again, I'm a happy camper. These wings are just.... well, I can't find a word to accurately describe how great these are! Without a doubt my favorite wing recipe, although one I use that uses key lime juice to "tang" up a basic BBQ sauce is good too... :)
