I realized I’ve been cooking quite a bit of Asian food recently. So it is time to make some Western comfort food for a change. What can be more comforting than Lasagna? With just the two of us, we can’t have all of it. I gave some to my neighbor and freeze some for Diana too.
Ingredients:
12 sheets dried lasagna noodles
2 ½ cups pasta sauce
Filling:
3 links turkey sausage
1 large onion – finely diced
2 cloves garlic - chopped
2 packet 10 oz frozen chopped spinach – thawed and squeeze out all the water
1 tub 15 oz skim ricotta cheese
3 tbsp parmesan cheese
1 egg
½ tsp red pepper flakes
Salt and pepper to taste
1. Cook the pasta as package directions until al dente. Drain, pat dry and lay out the strips on baking sheet.
2. Remove the sausage from it casing. Heat up and non-stick pan, add a tbsp of olive oil and sauté the garlic and onions until fragrant. Add in the turkey sausage and continue to cook until the meat brown. Remove and set it aside to cool.
3. Preheat oven to 350 degrees. Prepare a baking dish and put a cup of pasta sauce at the bottom. Spread it out evenly. Combined the rest of the filling ingredients into the meat. Mix it well.
4. To assemble, lay the lasagna noodle out, spread about 2 tbsp of filling onto it. Roll up the noodle and place seam side down on the pan. Continue until you’ve used up all the noodles.
5. Pour the rest of the pasta sauce on top of the rolled up lasagna, cover it with foil and bake it in the oven for 35-40 minutes or until the cheese melted and sauce bubbly.
Note: For the pasta sauce you can either use homemade or store bought kind. As for the protein you can always replace it with ground beef, chicken or turkey.

Interesting! Never thought of lasagna with frilly ends! I haven't tried using ricotta cheese actually. Hope can do so someday. Your lasagna looks good!

Anon, if you live in the USA you can get it from any supermarket. If you live somewhere else I am sorry I can't help you. Actually the regular lasagna noodles work as well.
