Pomegranate Wild And Brown Rice Salad

We are slowly switching from white rice to brown rice. Carlos is actually not a huge fan of brown rice so for now I will mix the white and brown rice and he is slowly getting use to it. Beside brown rice I like wild rice too. I love the hearty and nutty flavor of the wild rice. For this particular salad I used Goose Valley Brown and Wild Rice Fusion. It is a combination for Brown rice, wild rice, heirloom red rice and sweet brown rice. If you like to make this salad you can use any type rice combination to suit your taste.



Ingredients:

2 cups of cooked Brown and Wild Rice Fusion
1 roasted chicken breast – slice thinly
2 spring onions – slice thinly
½ cup of pomegranate
1 cup of tomatoes – halve


Dressing:

3 tbsp extra virgin olive oil
2 tbsp fresh lemon juice
1 tsp honey
Salt and pepper to taste


1. In a small mixing bowl, mix all the dressing ingredients and set it aside.
2. In a large mixing bowl, combined the cooked rice, spring onions, tomatoes, pomegranate and chicken breast.
3. Pour in the dressing and toss in lightly until combined. Serve cold or at room temperature.

My pils just refuse to change their eating habit but at least my daughter is eating brown rice.

Beautiful colours and yet very healthy! My mother is eating brown rice for quite some time, but I still prefer white one..heehee!

We love wild rice... but so expensive here (imported from Canada AUD6 for a small packet)
:( ... so can't indulge too often... sigh

what a wonderful vibrate color of your dish!! I like brown rice but still can not take wild rice.For me it's like eating something different,weird..Mishu's school serving them brown rice for lunch,she told me the rice taste no good!!haha!! oh! will text you first b4 call you tommorow...about your questions..I still try to figure out..you know me "mong char-char" one!☺

The tomatoes look so cute.
It's very hard to change a man's eating habits.
My man eats brown rice, but needs dishes with lots of gravy with it. If not he feels it's too dry.
I know u can do it, just need some time to convert him.

LCOM, I've been eating brown rice for sometime now but for nasi lemak and chicken rice I still use white rice. It just taste different with brown rice :)

Ho Ho Ho, yea wild rice is expensive. Over here it cost around $5 for a small packet.

Grace, yea you need time to get use to it.

Lesley, I actually like wild rice. I like the nutty flavor of it. You have to switch it slowly for Mishu as she is so used to white rice.

Wendy, those tomatoes were given to me by a friend of mine. Aren't they cute and they are very sweet too. Yea not many people like brown rice.

Most man doesn't like brown rice :) But it is so much healthier and I like the texture and the nutty flavor of brown rice.

Nice salad...looks yummy with the pomegranate and tomatoes in it...mmmm I don't having some of Carlos share :p

Love brown rice and love those yellow golden tomatoes. You may want to come up with a dish where they (the tomatoes)take center stage :)
