Graham Cracker Crusted Chicken Bites

I woke up this morning feeling like I wanted to eat something comforting for lunch. What can be more comforting than fried chicken, right? Since I only have chicken breast in the freezer so I just used that rather than going out to buy the whole chicken in the super hot weather. These crispy chicken chunks are just perfect as an appetizer or snack. The graham cracker coating gives a slight sweetness to the chicken.


3 pcs chicken breast – cut into bite size chunks
1 ½ cup of graham cracker crumbs
2 tbsp flour


½ tsp garlic powder
1 tsp paprika
1 tsp coriander powder
1 tsp turmeric powder
½ tsp cayenne pepper
1 tsp salt
½ tsp pepper

1. Mix all the marinate ingredients together and toss in the chicken chunks. Leave it in the fridge and let it marinate for 2 hours.
2. Heat up some oil in a frying pan. Combined the graham cracker crumbs and flour together. Coat the marinated chicken with the crumbs and fry it in the medium heat oil until golden brown.
3. Remove the chicken pieces and drain the oil on paper town and serve it.

Note: If you can't find Graham Crackers you can always replace it with Digestive Biscuits.

The chicken bites must have been really crispy. I've only used cornflakes once not graham crackers.

Ohhh...that look so marvelicious.I think if I buat,tak sempat reach the dinner table.Just ratah like that while watching tv pun sedap kan?I see nowadays,graham crackers are featured in lots of recipes.What is graham crackers?...sorry la...I ni bodoh in a far flung place,!

I just tried this recipe, and I was surprised with how crispy the chicken got without any egg or milk to get the crumb to stick better.

On a linguistic note, I think your 'marinate' is actually a dry rub; a marinade is usually a fluid containing an acid (e.g. vinegar) or enzyme (e.g. pineapple juice) to tenderize the meat and help the mix to penetrate. It's a good dry rub, though!

I'll definitely be cooking this again; I was worried that the digestive biscuits would be too sweet, but they were just fine.
