Yakitori in Japan can be refer to skewered food in general, traditionally serve at small restaurant or stands that grill them to order over charcoal and to be consumed alongside alcoholic beverages in the evening. These skewers will be grill to perfections and then basting it with homemade yakitori sauce. I made my own basting sauce as I find them tastier than the store bought stuff. You can use this sauce for basting any meat or vegetable.
2 chicken breast
Some green onion – used the head and the white part only
1 tbsp soy sauce
pepper to taste
Some oil for brushing
½ cup chicken stock
½ cup mirin
½ cup soy sauce
½ cup sake
2 tbsp dark brown sugar
2 cloves garlic – crushed
1. Combined all the sauce ingredients in a saucepan and bring it up to boil. Reduce heat, continue to simmer until reduce by half. Remove from heat and let it cool down completely.
2. Soak 10-12 wooden skewers for 30 minutes. Cut chicken into ¼” thick x 3” long strips and marinate it with soya sauce and some pepper. Set it aside to marinate for 15-20 min.
3. Skewer the chicken alternately with the green onions. Heat up the grill or oven broiler or like me I used the stove top grill pan. Lightly brush the chicken with oil and put on the grill, let it cook, turning until lightly brown on both side. Brush with yakitori sauce and continue cooking, turning and basting it with the sauce until chicken cooked through.
4. Transfer to serving plate and serve immediately.
