Condiments

These are a few condiments that I will have in my fridge at all time. We eat them with our meals most of the time.

Pickle Green Chilies


Ingredients:

400 gram green chillies
1 1/2 cup rice vinegar
2 cups boiling water
1 tsp salt
1/2 cup sugar

Cut chillies and soak it in the boiling water for 1 minute. Discard the water. Put the chillies in the jar, pour in the vinegar. Add in the sugar and salt. Mix well. Refrigerate it for a few days before eating it.


I will have them with my noodles especially Sang Har Mee and Ipoh Hor Fun and as for Carlos he will have it with most of his meal and sandwiches.


Fried Shallots and Ginger



I usually top this on my fried fish and noodles soup. It is just a combination of shallots, ginger strips and green onions. Fried them in oil until lightly brown, drain the oil and keep them in a container. Keep them in the fridge and use it anytime.

Red Chili Sauce



I will make this sauce if I can find some fresh red chilies. This sauce is great to eat with fried stuff tofu, Prawn Fritters , Corn Fritters and even Stuffed Tofu . Carlos will use it as spread for his sandwiches.

That looks good! I think I need to keep more condiments like these in the fridge too! How long can you keep the shallot, ginger, green onion one? just a couple of days or does it keep longer than that?

Ya. These are a must in every meal we take everyday at home or eating out ! I can't take my meal without chili even during pregnancy! Haha.....
