Light Banana Donuts


I’ve been craving for some donuts for the longest time but too lazy to make anything that need kneading and proofing. If you see many of my recipes here, I don’t attempt any complicated recipes with too much work. That shows how lazy I am ha ha… I came up with this donut one fine day with nothing much to do and with some overripe bananas. It is simple and all it takes is for you to mix the ingredients together and fried. Taste wise it is light and soft and pretty similar to Jemput Jemput Pisang but in donut shape.




Ingredients:

1 1/2 cups flour
2 tbsp sugar
2 tsp baking powder
1/4 tsp salt
1 egg
2 bananas – mashed
3/4 cup milk
Some sugar for coating


1. Sieve flour, baking powder and salt. Add in the sugar and mix well. Lightly beat egg and milk together.
2. Add egg mixture into the flour. With a hand whisk, mix until combined. Add in the mashed bananas and continue to mix well. The consistency of the batter should be thick and not too runny. Set it aside to rest for 15 minutes.
3. Prepare enough oil over medium heat for deep frying. Prepare a piping bag with star nozzle. Put in some of the batter in the piping bag. Pipe a circle of dough into the oil. Fried over medium heat until golden brown on both sides.
4. Drain the oil on paper towel and dust it with some sugar before serving.

Sounds lovely, not easy to pipe donut shapes directly into oil I think, well at least not easy for me! You seem to be able to do it so perfectly!

Simple ingredients but i don't think I can manage to pipe so round donut directly into hot oil. You did it too well.
