Stir-Fry White Asparagus with Shrimp

I found some fresh plump white asparagus at relatively cheap price the other day and I bought 2 big bunch of it. I find white asparagus has a more delicate and a bit more tender than green ones. I did a quick stir-fry with it to maintain it crunch and delicate flavor. You can always use green asparagus for this dish.

Ingredients :

1 bunch of aspagagus.
10 shrimps - peel and clean
1 red pepper - cut into bite size pieces
1 cloves of garlic - chopped
2 tbsp of chili paste
1 tsp of sugar
Salt to taste

1. With a a sharp vegetable peeler remove the fibrous skin at the bottom of the asparagus spears. Once all the asparagus has been peeled, cut off the bottom end about one inch up to remove the hard end. Then cut into 1" lenght.
2. Heat up a pan with some olive oil. Add in garlic and stir fry until fragrant. Add in the shrimps and stir-fry until it turn pink. Add in the chili paste and continue to stir fry for a minute.
3. Then add in the red pepper and asparagus. Stir briefly, drizzle a bit of water and continue to cook for another minute. Add in sugar and salt to taste. Stir well. Serve warm with rice.

Jenn Yu over at Use Real Butter just did a bacon-wrapped white asparagus dish. I am wondering, where this white asparagus is coming from. I thought they were a Spring vegetable?

I've never cooked with white asparagus before. Now I have to keep my eyes out for them.

Hi Gert. The chili paste you use, is it like cili boh? If homemade, how do you make your chili paste? I've seen a lot of recipes that use cili boh, but it's not available where I am. So I would like to make my own. Thanks!

I am also keen to try your fruit cake recipe. Your recipe states to use 600gm dried fruit. Those sold here come in 500gm packs. Does it make a difference if I use 100gm less than your recipe?

This vegetables dish is a nice meal for us who love spicy!!
we both have same sense of cooking this dish!!lol! I just use 2 kind of asparagus,green and white to masak sambal 2 days ago!! oh!!sedap nya!! I whack finish the whole plate myself!!

Anne, I notice there are more white asparagus now at the supermarket and its not that expensive. Many of our fruits came from Chile so this might be one of it too.

Kat, I put a link on the chili paste for the recipe. Yeah I made my own chili paste for my cooking. You can always reduce the amount of dried fruits for your fruit cakr snf it won't affect the cake at all. For me I always like my fruit cake pack with fruits :)

Cat, do try out the white asparagus as I find them more delicate and not strong as strong in taste. It cook really fast too.

Leemei, white asparagus is more delicate and not as strong in flavor.

Lesley, I notice we always cook the same kind of food. I guess we have very similar taste :)

Yum! I've seen some white asparagus for sale here at the local supermarkets, but they are expensive! :( I will give your recipe a try though, but with green asparagus. Thanks for sharing.

Hi Gert, how do u clean the white asparagus? For the green ones, sometimes I need to use potato peeler to peel off the hard skin. What about the white ones?

Jun, the white asparagus memang sedap. Very mild in flavor.

I wonder why using the expensive white asparagus? For stir-frying, color makes no difference and the flavor is identical. But it looks wonderful and I am going to try yours.
