Blueberry Banana Muffins

I usually make muffins when I have leftover over-ripe bananas and berries in the fridge. It’s the easiest to make and you can whip it up in 10 minutes and in no time you will have some wonderful warm muffins for breakfast. I am not sure why this punnet of blueberries produces such a deep blue color and it looks almost black after I baked it and not the usual deep purple color. Are there a few types of blueberries out there?

Ingredients :
1 1/2 cups all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
3 large ripe bananas
3/4 cup granulated sugar
1 large egg, slightly beaten
1/3 cup unsalted butter, melted
1 cup fresh or frozen blueberries (if using frozen blueberries, do not thaw)
1 tbsp. all-purpose flour

1. Preheat oven to 375 degrees F and line the muffins tray with paper cups.
2. Combine 1 1/2 cups flour, baking soda, baking powder and salt in a medium bowl make a well in the center.
3. In another bowl, mash bananas; add sugar, egg and melted butter; mix well. Pour mixture into well. Mix batter until just moistened; do not over mix.
4. Toss blueberries with 1 tablespoon flour and gently fold into batter.
5. Fill prepared muffin cups about 3/4 full bake in the oven for 30 min or until its golden brown. Remove and cool on wire rack.

You are such a good cook and if you dont tell, nobody knows u reside in US. Look at the Asian food u have besides the muffin; I like the kueh lapis.

I don't know much about types of blueberries but I sure do love blueberries muffin and with banana in it surely it taste great! And then top it up with nuts. Yummy!

I've been wanting to experiment with fresh vs. frozen blueberries. Most of mine have come out as dark as yours. I LOVE muffins and can't get enough recipes :)

This blueberry banana muffin - I am going to give it a try this weekend. I so happen to have some bnananas. But I think I will use the dried blueberries which I still have. Think it will still be OK ?

Yatie, I normally keep it in the fridge and warm it up in the microwave oven for a 15-20 seconds before eating it.

Wow! What a yummy recipe. I just made it this morning. It's delicious. I loved it. Thank you for posting. I do have a question though. Do you have problem taking the muffin out from the muffin cups? Just curious...

My goodness!!! Literally... these muffins were spectacular!!! I only had whole wheat flour so I used that and added a little milk to the recipe... they turned out wonderfully and my family including all 3 of my children enjoyed them as well! The only problem that I found was that I should have made a double batch!!! They just didn't last long enough!!!!

These are awesome! My very favorite muffin recipe ... I just changed two things to make them healthier:
I substituted unsweetened applesauce for half of the butter, as I am trying to keep my diet low in saturated fat.
I also substituted whole wheat flour for the all purpose flour.

Sometimes I put a sugary topping on top made of brown sugar, butter and flour mixed and crumbled on top before they go in the oven. My partner loves them done this way, but I think they are amazing without any additional sugar!

Thanks so much for this great recipe! I've been making them every week for breakfasts ever since I found it.
