I made these patties to share it with one of my Zumba buddies. She was telling me that she is not a fan of quinoa and she finds them too bland and boring. I don’t blame her as I find them tasteless and boring too. So I invited her over to try these patties out. Guess what, she loves it. She had a few and I packed some for her to take home too.
I’ve made this before but this time I added some steamed broccoli to it. You can actually add other type of veggies like carrot, grated zucchini, chopped spinach and other cheeses to it. Get creative! I pan-fried these as I prefer them this way but you can always bake them in the oven until golden brown. You can serve this with salad or have it as it is.
Ingredients:
3 cups cooked quinoa (for better flavor, cook them in chicken or vegetable stock)
2 eggs
4 spring onions – chopped
1 cup steamed broccoli - chopped
1 cup or more breadcrumbs
¼ cup grated parmesan cheese
Salt and pepper to taste
1. Combined all the ingredients in a mixing bowl. Mix well. Add in more breadcrumbs if necessary to achieve a mixture that will hold its shape when formed into patties. Let the mixture rest for 15 minutes in the fridge.
2. Heat up a non stick pan; add in 2 tbsp of oil over medium heat. Form the mixture into small patties (I used ice-cream scoop). Cook the patties until golden brown on one side and then flip it over and cook till brown.
3. Remove patties from the pan and serve warm or at room temperature.

I brought some quinoa at Trader Joes and still never got around to make anything with it. I heard you could make sushi with but not sure it hold together well.

Tks for sharing.Im from Singapore.I tried the Quinoa recipe.My son and I love it.I used red Quinoa as I have left over in the cupboard.
