Chinese Style Braised Honey Spare Ribs
This dish is super easy to make. With just a few ingredients it turns out a wonderful dish to have it with rice. All you have to do it let the ribs simmer for some time and the meat will be so tender and literally fall off the bones when you eat it. I actually bought a whole rack of ribs and get the butcher to cut it into smaller pieces.
2-2 ½ pounds of ribs – cut into small pieces
5 slices of ginger
3 cloves garlic – roughly chopped
3 spring onion head
1 tbsp sugar
1 1/2 tbsp hoisin sauce
4 tbsp soy sauce
4 tbsp Chinese cooking wine
½ tsp thick dark soy sauce
2 -3 tbsp honey (depend on how sweet you like it)

Some toasted white sesame seeds
1. Blanch the ribs in boiling water to remove the blood and any impurities. This will takes about 5 minutes. Remove the ribs and wash in cold water for a few times and drain dry.
2. Heat up a tbsp of vegetable oil in a wok over medium heat and add in the sugar. Once the sugar caramelizes add in the ribs and turn up the heat. Turn and toss the ribs around for a few minutes and add in the garlic, spring onion heat and ginger. Continue to turn and toss until you smell the aroma ginger and garlic.
3. Add in all the rest of seasonings and enough water to cover the ribs. Bring it up to boil and turn down the heat to low and cover. Let it simmer for an hour and the half (occasionally stir the ribs around to get even cooking) or until the ribs are soft and sauce thickened. Check seasonings.
4. Remove from heat and serve.
