We like having BBQ on the weekends. The weather at the bay area during summer it not too warm and we do get a lot of breeze in the evening. So it is a perfect weather to spend some time sitting at the backyard and do some grilling. Normally I will prepare a protein dish either steak, chicken or pork and we usually have it with grill corn and some salad. This is one of the usual ways we like to grill our pork loin.
Ingredients:
1 1/2 pound pork tenderloin
1 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
2 tbsp vegetable oil
Glaze
1/2 cup apricot jam
1 tsp grated ginger
2 tsp lemon juice
1 clove garlic – chopped
1. Marinate the meat with salt, pepper, garlic powder and oil. Set it aside for at least 30 minutes.
2. Combined the glaze ingredients and mix well.
3. Grill meat over hot fire until brown on all sides and internal temperature reaches 145 degree F. This will take about 15-17 minutes (depend on the size of the pork loin)
4. Brush the meat with plum glaze, cooks it for another minute. Transfer the meat to platter, cover it with foil and let it rest for 5 minutes before slicing into it. Serve meat with the remaining glaze.
Note: I will normally grill a bit extra so we can have leftover for our sandwiches.
