Herbs Fried Rice

I think everyone knows how to make good plate of fried rice. I’ve fried tons of it my life using different type of ingredients and by far I think this is my favorite. My friend Richard told me one day he uses herbs like kaffir lime leaves and curry leaves from his garden to make his fried rice and it turn out really good. What a great idea for a change from our regular fried rice. Inspired by his fried rice this is something I came up with. I hope you try this out as I am sure you are going to like it too.

Ingredients:

3 cups of cooked rice – overnight rice prefer
1 piece of chicken breast – cut into small cubes
10 pieces of shrimps – peel and deveined
2 eggs - beaten
2 shallots – sliced thinly
2 cloves garlic – finely chopped
1 tsp finely chopped ginger
1 lemon grass – removed the hard outer layers and slice thinly
3 bird eye chilies – cut small
1 sprig of curry leaves – remove rib, roll it up and sliced thinly
3 kaffir lime leaves – remove the rib, roll it up and sliced thinly
1 tbsp fish sauce
2 tbsp soy sauce
Salt and pepper to taste

1. Heat up wok on high heat and add in 2 tbsp of olive oil. Put in shallots, ginger and garlic and stir fry until fragrant. Add in chilies, lemongrass, curry leaves and kaffir lime leaves. Continue to stir fry until you can smell all the spices.
2. Add in the chicken and continue to stir fry until the chicken changes color. Add in shrimp; stir fry until the shrimp is slightly pink.
3. Push all the meat to the side of the wok, add in another tbsp of oil, and pour in the eggs. Scramble the eggs for a few second or until half cook, add in the rice and all the seasoning.
4. Continue to stir fry for another 3 minutes. Check seasoning, dish out and serve warm.

reading your recipe, I can imagine the aroma but wouldn't the kaffir lime be very tough to the bite, even when sliced thinly ?

Love anything with Kaffir lime leaf in it...very fragrant.With the same ingredients,replace the rice with bee hoon pun sedap.I will try this..sooner than later as I am in a super lazy mood to cook anything fancy.Thanks for the recipe.

must try your style of Frice soon!! look really good using herbs!! hmmmm...yeah! my curry plant and kaffir lime plant!! should I remove the leaves b4 bring indoor now? I still left them outdoor cuz it's have better sunlight but I think the nite is getting cooler..

coffeesncookies, I took the tender leaves of the kaffir lime. If you are worry it being tough you can chop it finely.

Sonia, both herbs gave the fried rice a wonderful aroma to it.

K.Nor, good idea in adding the daun kunyit to it tapi I don't have much daun kunyit as I am keeping it for my rendang so I tak taruk :)

Lesley, I took all my plants into the house at night and take it out during the day. Temp at night is way too cold for the plants.
