Healthy Banana Bread

We love banana bread! Baking this bread is a great way to get rid of over-ripe bananas. This bread is healthy and packs with potassium. It is dense, moist with sweet bananas flavor and most of all I don’t feel too guilty indulging it with a cup of hot Milo (hot chocolate)

Ingredients:

1 cup flour
1 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
½ tsp salt
1 cup brown sugar
2 large eggs
1/3 cup low fat yogurt
1 tsp of vanilla
4 tbsp vegetable oil/melted butter
1 ½ cups mashed banana (about 4 bananas)
1 cup dried cranberries
1 cup walnut – chopped

1. Prepare a loft pan, greased and line it with parchment paper. Pre-heat the oven to 350 degree F. In a mixing bowl, mix the flour, baking soda, baking powder and salt together and set it a side.
2. In another bowl, combined sugar, eggs, yogurt, vanilla, oil and mashed bananas. Mix well. Add in the dry ingredients into the eggs mixture. Mix until combined
3. Lastly add in dried cranberries and walnuts. Mix well and pour it into the baking pan. Bake for 40-50 minutes or until golden brown.

Note: This bread taste even better the next day.

Your banana bread looks packed of good stuff! I think the next day you can toast it up and sledder some cold butter would be a super breakfast to wake up to!

I could tell from the list of ingredients, you try to make it as healthy as possible. Have you tried using Muscovado sugar? I got mine from an organic shop, apparently it's typical of England but very hard to find in Aussie. I never use brown sugar ever since then!

Ohhh.... I love those cranberries in there... Adding a pretty red dimension to this healthy brown cake.

I'll love to eat these for breakfast.. Err.. I don't think I've had breakfast for a long long time.

Anncoo, no whole wheat is not bread flour. Whole wheat flour is healthier and have more nutritious than refined white flour but you can use the regular flour for this bread.

Full-timed housefly, can eat the whole loaf without feeling guilty ha ha..

healthy recipe indeed. The low fat youghurt mentioned in recipe i guess is 1/3 cup? run out of wheat flour, substituting with plain flour; guess cld end up like cake texture..... will see
