Steamed Salted Chicken with Chinese Wine

When the organic free range chicken goes on sale I will usually buy a few of it and freeze it up. Normally a 2.5 pound chicken will cost around $14.00 each but that day it went for $8.00 each. The best way to prepare this type of chicken is steam it. It retains its flavor and sweetness. The chicken came out tender and juice, definitely a great dish to serve for dinner with some Ginger Scallion dipping sauce.

Ingredients:

Half chicken – preferable free range chicken
1 tsp salt
3 tbsp of Chinese cooking wine
5 slices ginger
3 stalks spring onions/scallion

Chocolate Chip and Pecan Cookies

After being sick for some time I am finally back to my old self again. I need some comfort food. What could I whip up to make this day even better? Something like cookies? My favorite, or everyone’s favorite is chocolate chip cookies. These are the perfect chocolate chip cookies for me. Crispy edges with slightly chewy center and an exploding rich chocolate chips and a hint of coffee flavor. Yummy!!

Mee Rebus/Noodles in Sweet Potato Gravy

This mouth –watering mee rebus (in English, Mee rebus is literally translated as boiled noodles) is a popular dish among Malaysian and Singaporeans. It is a noodles dish served with thick sweet potato gravy and garnish with prawn fritters, fried tofu, hard-boiled egg, bean sprout, julienned cucumber etc. I made this some time ago with the leftover prawn fritters that I made perviously and decided to use it up for this dish but if you don’t want to make any fritters you can always replace it with blanched shrimps or cooked chicken.

Ingredients for the gravy:

4 shallots
3 cloves garlic
1” ginger
4 tbsp dried shrimps – soak in water for 15 minutes
6 red chilies – remove seeds
2 stalk lemon grass – remove the outer layers and cut small

Blend all the above into a smooth paste.

Rainbow Pudding

I’ve been under the weather for the past one week. With all the medicines and nasal spray my taste bud and sense of smell went haywire. I can’t taste or smell anything at all. I have no appetite and all I want is something cold and sweet. I decided to make this pudding. I love the vibrant marbling effect of this pudding. Aren’t they beautiful?
