Vanilla Cupcakes


I am back from my super long vacations. First I would like to apologize for not replying to all your comments. I will get to it soon. It was great spending time with my family, friends, ex-classmates which I have not met for over 30 years and also some blogging friends. It was nice meeting up with all of you.

I am having so many backlogs in my posting. I baked these cupcakes over in 2012 for Carlos office Halloween party. Thank God I recorded all my recipes so that I don’t forget. His department Halloween theme was Bumble Bee so I decorated cupcakes to fit the theme. The cupcakes were light, fluffy and really moist. Carlos said these cupcakes were gone within minutes.  I used my previous recipe but I am posting it here again. As for the frosting you can decorate it with any type of frosting you like.



Ingredients:

1 1/4 cups cake flour
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 eggs
3/4 cup sugar
1 1/2 tsp pure vanilla extract
1/2 cup vegetable oil
1/2 cup buttermilk


1. Preheat oven to 350 degree F. Line the muffin pan with cupcake liners.
2. Sieve cake flour, baking powder, baking soda and salt. Set it aside.
3. Whisk eggs in an electric mixer for 30 seconds, then add in sugar and continue to whisk for 30 seconds. Add in vanilla and oil and whisk till combined.
4. Reduce mixer speed to low and slowly add about half of the flour mixture. Add half of the buttermilk, then the rest of the flour and the rest of the milk. Whisk until just combined. Scrap down the side of the bowl.
5. The batter will be thin. Fill the liners to about 2/3 full of batter. Bake cupcakes for 13-14 minutes or until it is done.
6. Cool in pan 1-2 minutes, then remove cupcakes from pan (carefully) and finish cooling on a wire rack. Frost as desired when fully cool.


Note: If you can’t find butter milk you can make your own. Put ½ tsp of white vinegar or lemon juice to ½ cup of milk. Set it aside for 5 minutes before using.

Hi Gertrude! Your cupcakes are kinda cute and sweet for Halloween :) Definitely better than the scary stuff LOL!
