Eggless Strawberry Ice-Cream


I am very greedy when it comes to buying strawberries. I will usually buy more than I need when they were on sale. I will usually freeze up the leftovers and when I have enough of it I will blend them up to make sorbet of ice-cream.

This is one of the easiest ice-cream to make. There are no eggs in it and you don’t have to cook it either. I just blend the frozen strawberries with sugar, the cream and milk, then put them in the ice-cream maker and turn it on. Within half an hour I will get the luscious and cream ice-cream. What a treat for summer.


Ingredients:

3/4 cup fresh cream
3/4 cup fresh milk – I used 2% fat milk
1 1/2 cup fresh or frozen strawberries
1/2 cup sugar (adjust the amount according to your taste)
1/2 cup roughly chopped fresh strawberries


1. Put the strawberries, milk, fresh cream and sugar in the blender. Blend until smooth.
2. Pour the mixture into the freezer bowl of an ice cream maker, and freeze according to manufacturer's directions.
3. When the ice-cream is nearly done, add in the chopped strawberries. When it is done, you can put it in a container and freeze it or serve it immediately.

Note: If you don’t have an ice-cream maker, after step 1, transfer mixture to any freezer proof shallow container and place it in the freezer to set for 5-6 hours. Take the set ice cream out after 6 hours and blend well using a mixer or in a blender. Add in the chopped strawberries and mix well. Once again pour the blended mixture into the same container and place it in the freezer to set.

Linda, oh we eat ice-cream even in winter. I freeze them up to a few months but normally I will make ice-cream or strawberry sauce within a month.

I google search and found your webpage. I am a Malaysian. Your recipe is absolutely easy without cooking and egg. Is fresh cream referring to heavy cream? What brand of ice cream maker you use?

Anon, yes fresh cream is heavy cream. My ice-cream maker is Cuisinart.
