Crispy Baked Shrimp

Most of us love fried food. Who doesn't? Unfortunately, I am trying to cut down on that. So the next best thing to do is to bake them. Sure baking might not give you the exact crispiness but this shrimp is still a crowd pleaser. Lightly breaded with panko bread crumbs and baked within minutes in the oven. This baked crispy shrimp is one dish that everyone will love. Serve it alone or add your favorite sauce to make this a perfect appetizer or entrée.

Ingredients:

20 large shrimp – peeled, deveined with tails intact
½ tsp salt
½ tsp pepper
1 egg white
1 cup of panko bread crumbs

1. Preheat oven to 450 degree F. Line a baking sheet with aluminum foil. Drizzle it with some olive oil.
2. Marinate the shrimp with salt and pepper. Beat the egg white and pour it into the shrimp. Mix well.
3. In a plate combined the bread crumbs with ½ tsp of salt. Mix well. Coat the shrimp with the bread crumb. Lay the shrimp on the baking sheet, drizzle a bit of olive oil over the shrimp and bake for 6-8 minutes until golden brown.

Note: If you like coconut you can add ¼ cup of it to the bread crumb.

this looks tasty, and you are right, the alternative to deep frying would be baking... i always have problems frying prawns as hot oil always splash (maybe i didn't dry the prawns thoroughly)

me too! Baking is definitely the way. I love eating fried food, but I hate deep frying. and it's also not healthy.

Baking is so much healtier than frying and this is such a great idea. If you didn't mention that it was baked, I would have thought it was fried. It looks that crispy!

This is delicious! I replaced the salt with old bay and garlic powder to season the shrimp. I also lined the baking sheet with non stick foil instead of using olive oil. Great recipe crispy and good! The panko gives such a nice texture. I don't miss fried shrimp at all :)

I made the recipe as printed, served it with Crosse and Blackwell Cocktail Sauce. We agreed they were tasty, so much so that I would make them again! Served with Zatarain's Black Beans and Rice and green salad with Cardini's Caesar Dressing. I belong to Weight Watchers...seems like this recipe belongs on their site! Thanks!!
