Cherry Clafoutis

This is probably the last batch of Cherries I found at the supermarket three weeks ago. The season should be over by now and I have to wait for next year to enjoy this super huge and sweet Bing's cherries. I like them fresh but sometime I do make some dessert out of it. Here is one super easy custardy recipe. You can replace it with some other fruits too.

Ingredients :

1 pound of cherries - pitted
1 tbsp of icing sugar
3 tbsp of sugar
3 tbsp of flour
3/4 cup of milk
2 eggs
1 tsp of vanilla
zest of half lemon

1) Mix cherries with icing sugar and set aside.
2) Pre-heat oven to 375 F. Butter a shallow baking dish or 4 small ramekins.
3) Mix flour, sugar, eggs, milk, vanilla and lemon zest into a batter.
4) Pack cherries on the bottom of dish and pour batter over it.
5) Bake for 45 min or until set. Insert a knife into the center and it should come out clean.
6) Serve with ice-cream or by itself.

Note : Put a tray underneath the baking dish as the juice of the fruits might bubble out. It will avoide you the hassle of cleaning up the oven later.
