Sugar Cookies

I like baking with kids especially with my nieces and nephews. I’ve been doing it with them for years when I was in Malaysia. We will usually baked cookies, cupcakes and sometime pizza. I think it is a wonderful way to bond with them and also encourages creativity and gives kids a real sense of accomplishments when they eat what they made. It also created a lasting and loving memories for all of us. I miss them a lot and sometimes I do wish they don’t grow up so fast.

Anyway, I made these cookies with my friend daughter Isabel a few months ago. She helps cutting and decorates the cookies. I think she enjoyed doing it and not to mentioned eating all the cookies. Her mom told me that she refused to share it with her parents ha ha.. These are just simple sugar cookie decorated with some colorful sprinkles and some royal icing.

Ingredients:

1 stick/113 gram butter
3/4 cup sugar
2 cups flour
1/2 tsp baking powder
1/4 tsp salt
1 egg
1 tsp vanilla
2 tbsp milk

1. Prepare and line baking sheet pan with parchment paper. Sift flour, baking powder and salt and set it aside.
2. Cream soft butter and sugar until light and fluffy. Add in the egg, milk and vanilla. Mix well. Slow down the mixer and slowly add in the flour in two batches. Mix until just combined.
3. Transfer the dough to a work surface. Shape into two discs, wrap the dough with plastic wrap and let it rest in the fridge for an hour.
4. Pre-heat oven to 350 degree F. On a lightly floured work surface, roll out the dough to 1/8” thickness. Cut into desired shape and transfer to baking sheets pan, leaving an inch in between.
5. Bake until lightly golden, about 12-15 minutes. Transfer to wire racks to cool.
6. Decorate with colorful sprinkles or royal icing if desired.

Haha.Nowadays, I try very hard to stay calm and be blind. If his father is around, I'll force myself to sit upstairs and let the father helps him and deal with the mess. You are so right, they do grow up very fast.. Sigh!
