Carrot Juice and Soy Milk Jelly - Day 18

I just love the vibrant color of this jelly. Don’t you just want to eat it? If your kid is not a fan of carrots, make it into jelly. I am sure they just can’t resist this. Since I have a huge bag of carrots in my fridge I was thinking what I can do with it using the Jelly Mould. I can’t think of much except juicing it with my Jack LaLanne’s Power Juicer and make it into jelly. After all I love carrot juice and it should taste good to in jelly and I was right.




Soy Milk Layer:

300 ml unsweetened soy milk
3/4 tsp agar agar powder
1 tbsp sugar
1 pandan leaf

Carrot Juice Layer:

300 ml cups carrot juice
3/4 tsp agar agar powder
1 tbsp condensed milk

1. Wet the jelly moulds and set it aside. Combined all the soy milk layer ingredients and bring it up to a boil. Cook until the agar agar powder dissolved.
2. Pour the mixture into the moulds and tilt the mould to the side. Let it set completely.
3. Combined all the ingredients of the carrot juice layer and bring it up to a boil. Cook until agar agar powder completely dissolved.
4. Set the jelly moulds back to the upright position; lightly scratch the surface with a toothpick. Pour in the carrot juice layer and set it aside to set completely.
5. Serve cold.


Note: Please adjust the amount of sugar and condensed milk to the sweetness of your liking.

    wah, sis... u ada Jack LaLanne’s Power Juicer... dulu2 suka tgk iklan juicer tu kat tv... skrg dah tak ada... ending with a very juicy juice & a very dry pulp... also end up with a very healthy dessert, kan...

    Never try carrot n soy milk before. But very healthy! I love it, esp. my kids never fancy carrot. I usually have to shred it into "orange noodle" and fry together with noodle! They found it interesting! :)

  22. Healthy and yummy..great idea to make the kids take carrot. Great combination and those cute jelly flowers are cute too. I must try making these carrot jelly for the sunday school kids and add a dose of orange juice to the carrot juice to musk away the carroty smell :) thanks for the idea !
