Open- Face Egg Sandwich

This is a simple egg sandwich that I like to prepare for our quick lunch. There’s really nothing better than a combination of runny egg yolk and lightly toasted whole-grain rustic bread. There isn’t much of a recipe here as you can experiment with any ingredients your taste bud prefers. Before I eat it I like to ‘poke’ the egg with fork and let the warm yolk run down the side before I sink my teeth into it. DE-LI-CIOUS!

Ingredients:

2 slices of toasted whole-grain bread
2 eggs
1 large tomato - sliced
Some lettuce
Half of avocado - sliced
Some mayo
Salt and pepper to taste

1. Fried the eggs on a non-stick pan. Sprinkle some salt and pepper on it.
2. Spread some mayo on one side of the bread. Top with lettuce, sliced tomato, sliced avocado and cooked egg. Serve immediately.

  1. I love to slurp up the yolk before proceeding to eat the rest of the sandwich:D I love eggs done this way and a friend of mine makes the eggs just like you did!:D I love it!

  5. I have always been curious with avocado for sandwiches filling. Do you use the extra soft/ripe avocado or the hard ones?

    I think only Oz saja the pisang mahal as they don't import any bananas from other source except from Queensland and you know what happened to QSL recently.NZ don't import any bananas from OZ so it does not effect us.Our bananas are from Phillipine,I think...those Dole bananas..same with pineapples too.So no problem as Kiwis can eat their bananas till their hearts content...hehehe

    Jun, the next time you make sandwich, try out with some avacado and you have to used the the soft ripe ones.
