It has been a long while since I last made these. I’ve been thinking of it for the past few weeks and finally made some for our afternoon tea. I used to made sardine rolls often during my teen years as that was the first kind pastry I learned to made in school. Since Carlos is not a fan of Sardines I change it to can tuna. As for the pastry, I just use my favorite shortcrust pastry recipe. This pastry is light and very flaky and it will be great for pies too.
Pastry:
2 1/2 cups flour
3/4 cup/1 1/2 stick/170 gram cold butter – cut into small cubes
1/2 tsp salt
2 tsp sugar
1/2 tsp baking powder
1 egg
2-3 tbsp cold water
1 egg – beaten (for egg wash)
Filling:
2 cans tuna (in water)
1 shallot – cut into small cubes
1 tomato – removes seeds and cut into small cubes
1 green or red chili (optional)
2 tbsp mayonnaise
1 tbsp ketchup
2 tsp lemon juice
1/4 tsp salt
Few dashes of pepper
1. Combined flour, baking powder, sugar and salt in a food processor. Give it a few pulses. Add in the butter and pulse until it resembles coarse breadcrumbs.
2. With the food processor running, drizzle in the lightly beaten egg and 2 tbsp of cold water. Process until mixture begins to form into a large clumps (add in a bit more water if necessary).
3. Turn pastry out on to a work surface and knead gently to bring the dough together. Form into a square disc. Wrap in plastic wrap and refrigerate for at least an hour before using it.
4. In the meantime, prepare the tuna filling. Combined the filling ingredients in a bowl and mix well. Set it aside.
5. Roll out the pastry into rectangle shape. Cut it to about 12” w x 3 ½” h strips. With the wide side of the pastry facing you, put some filling in the middle of the strips and roll it up. With a shredded knife, cut into 2” logs. Give a couple of slits on each log for the steam to escape while baking.
6. Do the same to the rest of the pastry. Egg washes the rolls and bake in a pre-heated 350 degree F oven for 30 minutes or until golden brown.
7. Serve warm or at room temperature.

Happy Mother's Day but this recipe sounds like everyday to me. I love your recipe and it inspired me to make a tuna melt type roll because I love tuna melts. I hate making my own dough though, do you think the already made dough would do fine?
