Most people like chicken as they are inexpensive and one of the most commonly used meats. I cooked chicken at least 3 times a week. I stew it, stir-fry, steam it and every so often roast it. You can basically rub any type of spices to it and it will always turn out great. The chicken turns out juicy, crispy and very succulent that everyone will love.
Ingredients:
4 whole chicken legs and thigh attached
Marinate:
4 cloves garlic – finely chopped
2 tsp ground cumin
1/2 tsp cinnamon powder
1 tsp turmeric powder
1 tsp cayenne pepper or chili powder (more if you like it spicy)
2 tsp sweet paprika
1/2 tsp black pepper
3/4 tsp salt
2 tbsp honey
1 1/2 tbsp lemon juice
1. Clean the chicken, remove fat and skin (you can leave it on if you like the skin) Give a few light cuts on the meat. Pat the chicken dry with some paper towels.
2. Combined all the marinate ingredients and mix well. Marinate the chicken for at least 3 – 4 hours. Make sure the chicken is well coated well.
3. Pre-heat the oven to 375 degree F. Put the chicken in a deep dish together with all marinates. Cover it with aluminum foil and bake in the oven for half an hour.
4. Remove the foil and then continue to bake for another half an hour or until chicken cooked and golden brown. Turn the chicken pieces occasionally while baking.
5. Serve warm with some roasted vegetables.

ReplyDeleteChicken is definitely healthier, and it's white meat too. Grill them or choose the breasts, and they are just the healthier options of protein, although I love fish better..:D
ReplyDeleteMoroccan Spices has a very special fragrance that I always love. I remember i used to buy those bottled moroccan spices to marinate chicken or stir-fry while I was staying in Australia. And yours sure look delicious :) Thanks for sharing the recipe.

But Eliot said it's tasteless!! haha!! now I even didn't wanna to roast my own chicken!!so malas !
ReplyDeletechicken can be cooked in so mnay ways, even with just a simple steam, it's already tasty! and frying a chicken is also much more easier than frying a fish! with those spices that you put in, sure this is real good!

ReplyDeleteSadly here chicken is more expensive than beef or lamb especially if they are corn fed, free range or organic.The 4 legged kids eat chicken everyday..koyak pocket!!..and you know what?I think I am the only human being that sucks when it comes to roasting a chicken.I never can get the perfect roast..hahaha.I think I'll stick to Nando's for the time being until my Guru ( you )visit me....Cannnnn?
I prefer chicken also, it's easily available and a healthier option compared with red meat. Will give recipe a try, sounds interesting to me :)

You know whenever I go back States, I'll stock up some of the spices like sweet paprika or cayenne pepper. Seems like it's very hard to find them here in Asia. The chicken thigh looks yum! Will try it without the cayenne, since my kiddies just can't take the heat. :)

Shereen, for us here Chicken is the cheapest. Satu ekor free range is about $8.00 and the regular chicken around $5.50. Everyone at home like my roast chicken. I think it the rub I pun on ha ha.. yea I can teach you when I visit :)

i also cook chicken 2-3times a week, usually simple Chinese style but not so often on grill. This roast must be very flavourful with all these herbs added.
