Homemade Cheese Crackers


I love cheese crackers especially Cheez-It I can eat it just like that or even put it in my soup. Why bake my own cheese crackers when I can just buy a box of it? Well, I simply like the idea that I am able to bake something I like to eat and also it’s much healthier without all the preservatives. These homemade cheese crackers are the most tender, rich, buttery, cheesy crackers you have ever eaten. It involves very little fuss. Just put everything in the food processor, roll out the dough, cut it and then bake it.

Ingredients:

1 stick butter (113 grm) – at room temperature
1 1/2 cups grated sharp cheddar cheese
1 1/2 cups Flour
3/4 tsp salt
1/2 tsp of black pepper
1 tsp cayenne pepper (less if you prefer less spicy)
1 tsp of paprika
2 tbsp of cold water (more or less)

1. Preheat your oven to 325 degree F. Line a baking sheet with some parchment paper.
2. Put all the above ingredients except water in a food processor. Pulse until it resembles coarse bread crumbs. Slowly add in one tbsp of cold water or a bit more until the mixture comes together into a ball.
3. Take out the dough and lightly floured work surface, give the dough a few knead and let it rest for half an hour.
4. Roll the dough out thinly about 1/8" thick. Cut out into desired shapes
5. Bake for 15 minutes or until the crackers start to get just golden on the edges
Remove the baking pan from the oven, and transfer the browned crackers to a cooling rack.

  2. thanks for converting the butter measurement. I had a hard time converting it, plus, minus, divide..and ended up at 112.5gm, which is half a block of Fernleaf butter here.

    I love your idea of making this because I found the store bought ones too salty for me. Will it be ok to omit the salt because the cheese is salty already? I wonder what kind of tool you used to make those nice edges.

    Wendy, Yes you can always omit the salt. For the round shape I used a cookie cutter and for the square I used a pastry cutter.

  14. This cracker look really delicious, I gonna to give a try later since my daughter just love everything with cheese. The problem I have to get the herbs cayenne pepper and paprika which these two items never appear in my kitchen before, hahaha..

  15. Emile, you can just omit those two ingredients and replace it with some dry herbs. I put cayenne pepper for a bit of spice and paprika for color.

    Jen, I used parchment because I am too lazy to grease and wash the baking pan. Of course you can just use lightly grease cookie sheet :)

  24. Christelle, these crackers didn't last long at our household. Only 4 days :) I think you should be able to keep this in an airtight container for over a week.

  25. I made these crackers tonight and I think I did something wrong... they are very good except that I feel like maybe I put too much pepper in it...or cayenne? Not sure which, anyway, I would totally make these again, just probably lesson both of those spices - I'm not a fan of too much heat though, so maybe it depends on taste buds. Thanks for the recipe!

    I will try this recipe and hope it turns out better than the last one I tried. I usually invent my own, which is lots of fun but the last cheese crackers I did had good flavor but would not roll out AT ALL! Not sure what I did wrong.
