Fried Udon Noodles

I love udon noodles. It can be in soup or quick stir-fry. I will always have a few packets of it in my fridge so I can have it anytime I want. Making this noodles dish is easy. You can pretty much use any type of proteins or vegetables you have in your fridge.

Ingredients:

1 packet fresh Udon noodles (400 gram)
1 piece chicken breast – removes skin and sliced thinly
10 shrimps – peel and deveined
3 cloves garlic – chopped
2 shallots – sliced
1 carrot – peels and sliced thinly
5 button mushrooms – sliced
1 yellow pepper – sliced thinly
A handful of sugar snap pea – cut small
1 green chili – sliced thinly



Seasonings:

2 tbsp Light soya sauce
3 tbsp Oyster sauce
1 tsp dark soy sauce
salt and pepper to taste
¼ cup chicken stock

Marinade for chicken:

1 tsp Sesame oil
1 tsp light soya sauce
1 tsp corn flour
Pinch of pepper

1. Marinate chicken breast meat with marinade. Set aside for 15 minutes
2. Heat up oil about 3 tbsp of olive oil in a wok. Sauté shallots and garlic until fragrant and lightly brown.
3. Add in chicken, stir fry until no longer pink and add in the shrimps, carrot, mushrooms, pepper, chili and sugar snap peas. Continue to stir fry until the vegetables are nearly done.
4. Add in the noodles and all the seasonings. Drizzle in the chicken stock. Continue to stir and mix well.
5. Dish out and serve immediately.

  5. I personally love cooking udon in this way too. Simply flavourful. I think udon also nice to go along with Penang Asam Laksa soup. Oh, my favourite. My mouth already watering by just mentioning it. haha.... Hope you're having a lovely day & stay warm.

  12. Yes! I love Udon noodles also, can be used for dry or wet version, but I still prefer the dry one.
