Mini Cheesecakes

These luscious and dainty mini cheesecakes are great for party, holidays gathering or whatever the occasion. One thing great about these little cheesecakes is their simplicity. Preparation time is very quick and best of all you can put any kind of topping to it. Since I don’t have the mini cheesecake pan I just used my muffin pan to bake these.

Ingredients for the base :

1 cup graham cracker crumbs
3 tbsp of melted butter

Ingredients for the filling :

1 packet (8oz) low fat cream cheese
2 tbsp of low fat sour cream
2 eggs
1/3 cup sugar
1 tsp of lime zest
3 tbsp of lemon juice
Some fruit topping.

1. Preheat oven to 375 degrees F. In a medium bowl, mix graham cracker crumbs and melted butter with a fork until well combined. Line 12 muffin cups with paper cups.
2. Divide crumb mixture evenly between the 12 muffin cups. Using the back of a small spoon press crumbs firmly onto the bottom and set it aside.
3. Using a food processor, blend softened cream cheese, eggs, lime zest, lime juice, sour cream and sugar together until well mix. Spoon cream cheese mixture into each cup (they should be 3/4 filled).
4. Bake for 15 minutes, remove from oven and place on rack to cool for 20 minutes then carefully remove cheesecakes from pan and let cool complete.Top it with your favorite fruit topping before serving.

    Nate & Annie, I always like putting a bit of lime or lemon zest to my cheesecake. Its kind of lighten up the heavy cheesecake a bit.

  17. Gert, Most government depatments have morning tea on a roster basis once a week - we get to 'network' and socialise.

    Normally its your section's turn every 3 months or so and we all chip in to feed about 60 people. Great fun and a good source of recipes!

    Anon, I line the muffin pan with papercups and you can just remove from the pan and tear the papercups away before you serve.

    I noticed that you have copyscape on your blog. From my understanding we're not to copy things from this blog. But how do we get the recipe copied for future use?   31. Anon, thanks for the comment. Of course you can always copy or bookmark the recipes for your own use. What you can't do is duplicate it and claim it to be your own. If you have a blog and wanted to publish my recipe or other people recipe you have to link it back to the respective blog or website that you get the recipe from.

    I made these the other day and they turned out quite well! I assumed the "1/3 sugar" that you posted meant "1/3 cup sugar" and it worked out just fine! I did not have a food processor, so I mixed it with my hands and it turned out just fine for a college girl!

    I did not have any strawberries so I put freshly cut up kiwi on top and my boyfriend really enjoyed it. Thanks for sharing this yummy recipe! We will be making it again in the future for sure :)
