Update 11/22/2010 (7.30pm): Still no right answer yet. I know the cake color might be a bit misleading. This cake is made out of one type of fruit and not sure what happen as it turn bright orange after baking. Hope this help with the guessing :)

I guess it's a red fruit that turned orange after baking. It's the reaction from the pigment betalain. Since it's a fruit, then beetroot is out.
My next guess will be dragon fruit, but I read that is hard to get over there. And Little Inbox has guessed that. So, I better not repeat the answer.
