Fruit Pastry Cake II

This cake is very popular among bloggers awhile ago. The last time I baked this cake was in 2007 for a gathering. This cake is very versatile and you can actually put any type of fruits you like on top of it. In my opinion this cake taste better the next day as the juices of the fruits really seeps into the cake. It is light and not greasy. I am not going to post the recipe here as I am sure most of you already have it but if you want you can refer to my old posting here .



I baked this cake for my friend Zue when I visited her at Harrisburg for Hari Raya. Here are some pictures I took of the cake.

Fruit Pastry Cake is always popular! I have made this about 4 times now since this summer! Great with any mix of fruits and so good when visiting people - they always love it!

Lesley, I just used the regular flour. Oven is so cheap now and you can get one for $300 so no point reparing it :)

Hey Ms Wan, I made this cake 3 weeks ago when a journalist from Holland visited us. She absolutely LOVED it!!! and so did we. Actually I just used mostly dried fruits that I soaked awhile and added a few other fresh fruits I could find :) This recipe will go into my most fav list!! Thanks for sharing. In fact, today I will make it again for a dinner we were invited to.

I am just wondering if this cake need to be refrigerated. It sort of harden the texture when I did that as I am afraid fruit cake can't withstand the hot weather here. Appreciate your reply.

Claris, this cake will definitely harden up when you put in the fridge as it has butter in it. I will normally cut them in half and eat half of it in a couple of days and keep the other half in the fridge. I will take them out to room temperature 2 hours before eating it or zap it up in the microwave for 30 seconds before eating it.
