Mango Pudding

I came across this recipe from Epicurious. It's not only has very little sugar and using low fat milk but it is laden with mango puree and it gives a very creamy texture, a very refreshing satisfying taste.

Ingredients :

3 tbsp water
2 tsp unflavored gelatin
1 1/2 cups mango puree
1 cup low-fat milk
1/4 cup sugar
Pinch of salt
some fresh fruits for garnish

1. Pour 3 tablespoons water into small saucepan. Sprinkle gelatin over; let stand 10 minutes. Stir over low heat just until gelatin dissolves. Remove from heat.
2. Put mango puree to a medium saucepan and stir over low heat until warm. Mix in gelatin, then milk, sugar and salt. Bring up to slow boil and remove from heat.
3. Strain mango mixture into bowl. Divide among prepared cups. Chill until set.
4. To serve: Run small knife around mango pudding, invert onto plates. If desired, drizzle with more honey or fruits puree. Garnish with fresh mango or other fresh fruits.

Gert ,lovely idea to use mango for this dessert.I still have mango puree in fridge but dunno what to do with it,NOW I know what to do with my mango puree!lol!.Are you usung Carlos new bought lightning for this photos?.Not bad at all:))

Hi, can I know do you blend/puree from fresh mango fruit or using the store bought mango puree. If we were to blend/puree from fresh mango fruit, will it be too thick? Do we need to add water? Thanking you in advance for your kind reply.

Anon, I used fresh ripe mango and I didn't add any water to it but you can always use the store bought mango puree for this.

i tried this out last weekend, but my pudding was grainy. i found it hard to strain the mixture as it was really thick. in the end, i gave up straining. could that be the reason ? appreciate your advice pls.

Octopusmum, did you puree the mango really fine? I used a spoon to push the mixture through the strainer.
